LOW CALORIE DENSITY FOODS // What I Eat in a Day 🌱 Part 5

  • Welcome to another of your favorite videos from me: Low Calorie Density What I Eat in a Day. This is part 5, I also talk healthy habits in addition to low calorie density foods for weight loss and overall health. Recipes are below. Happy eating!! Thank you for watching.
    🌱Pancakes
    1 tbsp ground flaxseed + 2 & 1/2 tbsp water
    1 tbsp maple syrup 1 ripe banana 1 cup plant milk
    1 cup oat flour (grind 1 cup oatmeal)1 tsp baking soda
    1 tsp vanilla extract
    1/4 tsp salt
    1/2 tsp cinnamon
    desired fresh fruit for filling (I used sliced banana)
    non stick electric griddle or large non stick pan
    If using an electric griddle, preheat it to 400 ̊F (205 ̊C).
    In a small bowl add the ground flaxseed & water to make a "flax egg" & let sit for 5 minutes.
    Add the flax egg, maple syrup, banana, almond milk, oat flour, baking soda, vanilla, salt, & cinnamon to high speed blender & blend on high for 1 minute.
    Pour batter by the 1/4 cup full on to the griddle/pan & heat 1 & 1/2 - 2 minutes per side. If adding fruit place before you flip to the second side.
    Allow to cool just a touch before serving, garnish with desired amount of Blueberry Syrup.
    🌱Blueberry Syrup
    2 cups fresh or frozen blueberries
    1/4 cup freshly squeezed orange juice
    2 tsp arrowroot powder
    1 tbsp water
    Place the berries and ¼ cup juice in a small saucepan over medium heat. Cook for 5-10 minutes, until bubbling. Slightly smash some of the blueberries with the back of a fork. Let cool slightly.
    In a small bowl, whisk together the arrowroot powder and water. Add the blueberry mixture. Let cool until slightly thickened and serve over pancakes. Stores well in a glass container with a lid in the fridge for 3 to 5 days.
    🌱Corn Chowder
    1 small sweet onion (chopped)
    6 cloves garlic (chopped)
    6-7 cups vegetable broth
    2 cups frozen corn
    2 large potatoes (peeled & chopped)
    1/2 red bell pepper (stem and seeds removed, chopped)
    1 tsp thyme
    1 tbsp fresh parsley (chopped)
    1/3 cup almond flour
    1/3 cup water
    salt & pepper to taste
    In a large soup pot add onion and garlic and 2 cups vegetable broth. Bring to a boil, then reduce to a low simmer for 10 minutes until onions are translucent.
    Add corn, potatoes, and 4 more cups of broth. Bring to a boil, then reduce to a simmer for 10 to 15 minutes until potatoes are tender.
    Transfer half of soup to a blender, and blend until smooth. Return to the pot.
    Add the extra cup of broth if desired for your preferred consistency. Add the bell pepper, parsley, thyme, and simmer 10 minutes.
    During this time make the almond cream. Put the water and the almond flour in the blender and blend until smooth. Transfer the almond cream to the soup pot. Salt and pepper to taste, then turn off and cover until ready to serve.

    Unfortunately, my family isn't vegan and I'm a recovering food addict, so my journey has been full of ups and downs, but nonetheless I've manage to lose 17 lbs, got rid of pain on both of my knees and constipation!😊

    OH my gosh!!! That soup looks amazing!!! I cannot imaging eating that much yet I can eat a lot of food but don't lose weight and I feel miserable so often and then I'm hungry or bored.... sometimes it's feeling of what if I don't eat... I can't imagine eating thAt much and then lose weight. I'm trying to figure out where to start out then understand I just have to get a few thing made up to start new habits and recipes. I am going to have to have a husband cupboard and a ME cupboard. lol..... your babies are adorable. Thank you Michele.

      It can feel overwhelming initially but just go one meal at a time, one day at a time and plan ahead to help yourself succeed.

    I loved your video! My 2 yo granddaughter lives with us and sometimes I have to take my Vitamix outside to run it if she’s sleeping ... I thought I was the only person on the planet that did that! Lol!

      Thank you Rita! I definitely eat them quickly and that helps lol but I also keep the leafy greens and herbs in glass jars filled with water in the fridge.

      Oh my gosh that’s crazy! I actually adapted it from a recipe my mom used to make with heavy cream, and bacon. Lol. I guess there’s only so many combinations out there haha! Well it’s a great recipe then, and glad it’s in line with forks over knives. 😀

    Looks delicious! How do you eyeball your pounds of greens? So a 3lb bag of broccoli could be polished off in just a couple days? Do you have some tricks

      I’ve heard great things about increasing your greens! I love hearing it with such conviction!! I just got a microwave steamer & it is making life so much easier!!!!

      Hey, thank you for watching. Yeah increasing greens has so many wonderful benefit for weight loss and beyond. I normally get it in with a low glycemic green juice or smoothie packed with greens like kale, spinach, Swiss chard, dandelion greens, and 2 very large salads per day. Microgreens in my smoothie and salad too. Just how I get it in, but try getting in a combo of raw and cooked greens through out the day and some at every meal.

    I have a nut allergy & can’t use the almond flour to thicken the corn chowder. What would you suggest that I replace it with? New Subbie Here 🥰🥰🥰

      Hey LaMesha (love your name btw) you could use a coconut milk if you are not allergic to that, or just completely omit the almond flour. It’s will still taste great and creamy once you blend up 1/2 the soup.

    Do you have any tips for someone who lives with other people who eat junk food? I want to clean it all out of my pantry but others in my home don't feel the same. 😬😓

      Hi Jane, maybe it’s possible to have a specific cabinet that is solely yours. It takes a lot of self-discipline and knowing your “why” for wanting to switch up your diet. But if you keep that “why” reason at the forefront of your mind and you carve out a place in your kitchen that is solely for you, it’s a good start. Good luck!

    You seem pretty out of touch w the average working person. Most of us are out of the house 10 hours a day working. We don't have time to make lemonade, green juice and pancakes, and that's just your morning. And, just put everything in your vitamin... Ummm, I doubt the majority of people watching have a $500 blender. If you can't relate, you come off as a snob.

      Wow. I work full time from home AND take care of my kids full time. But health is a huge priority for me. These are meal suggestions, you don’t have to follow it exactly. You can take what sounds good and make one meal in your day or prep things ahead to be able to have your healthy items ready to suit your schedule. I bought the vitamix in 2009, and at the time it was an investment for me. But I use it every single day in some capacity so I know it has been returned a few times over. It’s tough to make assumptions and not not my reality.
      I want to create videos that are aesthetically appealing as well as to help
      motivate people want to cook and eat more healthfully, and to assume that I cannot relate couldn’t be further from the truth.

      Wow who got out of the wrong side of the bed this morning. No need to be so rude, Michele is trying to make a living just like you. I've never heard Michele say we have to buy any of her products by force, it's your choice. Let's build each other up not tear each other down. In fact I find Michele very down to earth, I've followed others and she's one of the most casual, go with the flow people.
