Paneer Do Pyaza | Restaurant Style

  • 👉Ingredients:
    200 gms  paneer
    1/2 plain yogurt
    1/2 tsp Kashmiri red chilli powder
    1/2 tsp turmeric powder
    Salt to taste
    1/2 tsp kasoori methi
    1 tsp garam masala
    1 tsp paneer tikka masala
    2 tsp oil (for marination)
    🌿For the masala gravy:
    1 tbsp ghee
    1 tbsp cooking oil
    1 tsp cumin seeds
    A pinch of hing (asafoetida)
    2 green cardamom pods
    1-2 small pieces of cinnamon stick
    2 red onions, finely chopped
    2-3 cloves of garlic, grated
    1 small piece of ginger, grated
    Salt to taste
    1 tsp turmeric powder
    1 tsp red chilli powder
    3-4 tomatoes, puréed
    1 small piece of ratan jot (natural food colouring agent)
    1 tbsp water
    1 onion, cut into petals
    Finely chopped fresh coriander leaves
    👉Method:
    Start off by marinating the paneer cubes. In a bowl, add the paneer cubes along with plain yogurt, Kashmiri read chilli powder, turmeric powder, salt, kasoori methi, garam masala, oil and paneer tikka masala. Give us all a good mix and let it sit for at least 30 minutes.
    Then transfer the paneer cubes to a kadai and cook until all the masala dries out. This should take approximately 8 to 12 minutes on medium heat, stirring continuously. Once done remove the paneer and keep aside.
    To prepare the gravy for the ghee and oil in the same kadai, once he did add cumin seeds, and allow them to splutter. Then add hing, cardamom pods and cinnamon stick along with onions. Mix well and cook the onions for 3 to 4 minutes on medium heat. Then add the grated ginger and garlic and cook for another couple of minutes until fragrant.
    Salt, turmeric powder, chilli powder, along with tomato purée and give it all a good mix until everything is combined. Add a small piece of ratan jot that will give this recipe its beautiful red color. put the lid on and let masala cook for 10 to 12 minutes on low heat until the oil separates.
    Once the masala is cooked and the paneer cubes with the splash of water as well as the onion petals. Give it a mix, put the lid back on and let everything cook for just another five minutes until all the flavours are combined. Finally turn the stove off, sprinkle some finely chopped coriander leaves on top give it a mix and our delicious paneer do pyaza is ready to serve.
    Serve this alongside a hot garlic naan, roti or paratha to make it a complete meal.

    Nice efforts. ..but honestly now paneer is boring
