Bumbi I adore all of your videos. My mother recently passed away this past May. My mother was half Mexican and Puerto Rican. Growing up my grandmother didn’t have to the patience to teach her anything in the kitchen so she never really learned to cook any Latin dishes😂😂. When she met my father she learned how to make all types of Punjabi dishes as he is Punjabi. Unlike her, I learned to cook Latin food but never paid attention to her when she was in the kitchen but now I’m able to learn from you. Thank you for inspiring others. ❤

Your paneer looks very soft! The one in my grocery store is much firmer I'm not sure why. Yours looks way nicer I wonder why this is and if you have any tips?
I always buy Haldiram brand and very pleased with it. Cut the paneer into cubes, put them into a bowl of very hot water and leave them for half an hour. This method also softens them if they seem too stiff.

Then use the fine side of a grater or lemon zester and grate everything to a fine paste. I usually start heating the oil on medium high and add the whole spices. Let them heat up with the oil. As soon as they start spluttering, reduce heat to low and immediately add the next ingredient. In this way you will have more control over the spices. Adding whole spices to very hot oil may burn them.
This was my first Indian dish. It was great. Since I didn't have Paneer I used some cut up chicken. High praises from my wife!
