    This is another reason why you need a hammered wok. It uses less oil and acts like a deep fryer. It can also keep the heat even while you are frying the oysters at 350 degrees. In a wok they will be golden brown in less than 3 to 4 minutes and not over cooked inside. You are right about the yellow meal. But I don't want anything but salt and black pepper for seasoning saving the great flavor of the oyster. You can also have the dipping crap. Just my opinion. Chef Jerry Irmo South Carolina

    Bless your heart. Years ago my father in law used to fix me fried oysters and toast points for breakfast. I'd never had them before and was sold. He's gone now but I still love oysters for breakfast

    A super easy remoulade for fried oysters (or fried anything really).
    2 tbl spoons of mayo
    1 tbl spoon of cocktail sauce (or just horseradish if you prefer)
    Little bit of minced garlic or garlic powder
    Pinch of cayenne and paprika
    Salt/pepper to taste
    Literally takes one min and is delicious with these! Also I usually toss them in a little bit of whisked egg before I batter and fry (add Italian seasoning to the batter too), just a suggestion.

    Fried oysters looks delicious! I add corn meal to my flour mixture when I fry chicken and fish , it’s so good this way. Thanks for this recipe!

    I used to work for a small oyster restaurant and they wanted me to learn shucking, I wasn't fast in the beginning of course, but I could shuck 3 dozen in 2 minutes so they kept me as a shucker, then I saw to many scars and pain in my hands and left this job. I do love Fried Oysters now, I like raw oysters but very small and dress them up is the only way for me! Great recipe for dip John, Yum!

    I’ve never had fried oysters but I love them on the half shell and for Christmas my parents make oyster stew every year. They look delicious.

      Didn't they look GREAT? Back when I was in hs, after school I got a parttime job washin' dishes and the owners would give us one meal free, if we wanted steak, seafood or club samich, we'd pay 1/2 price, when they'd make fried clam fritters they were so good crispy yet chewy and no fancy sauce there, just plain ketchup along with a side of fries. Do you guys frequently eat oysters? Johnny boy here is giving me the valor to trying them, do you just eat them solo like he did here or can you eat with rice? Greetings to your hubby and you up there in the Beautiful White North! :)

      @@qualqui rice pasta fried its all good :) but only i eat them cave man wont touch them lol
      I would eat a big old raw one but if John sends me one it be rotten by the time it got to me lol i wont eat one thats rotten
      I like soup with clams or oysters too
      Sea food pasta or stir fry over rice
      I should have been born near the ocean lol love fish and i can swim like one too lol

    That's good to know, never having tasted them before, eating them raw brings back that Mr. Bean episode, lol but fried to a golden crisp and eatened with Chef John's secret sauce, which thanks to you Johnny boy is no longer a secret, hehehe....I'm game on trying them! I've seen them in local supermarkets, already shucked and put into plastic containers, always thought they were for eating raw, whether in an oyster cocktail or like you showed us with that Monster Oyster.     Try some McCormick Lemon Pepper seasoning for the tartar sauce...it has pepper, lemon rind, salt and garlic all in one
