This is another reason why you need a hammered wok. It uses less oil and acts like a deep fryer. It can also keep the heat even while you are frying the oysters at 350 degrees. In a wok they will be golden brown in less than 3 to 4 minutes and not over cooked inside. You are right about the yellow meal. I do love Fried Oysters now, I like raw oysters but very small and dress them up is the only way for me! Great recipe for dip John, Yum!

Didn't they look GREAT? Back when I was in hs, after school I got a parttime job washin' dishes and the owners would give us one meal free, if we wanted steak, seafood or club samich, we'd pay 1/2 price, when they'd make fried clam fritters they were so good crispy yet chewy and no fancy sauce there, just plain ketchup along with a side of fries. Do you guys frequently eat oysters? Johnny boy here is giving me the valor to trying them, do you just eat them solo like he did here or can you eat with rice? Try some McCormick Lemon Pepper seasoning for the tartar sauce...it has pepper, lemon rind, salt and garlic all in one
I like to flour my oyster and seasoning with Creole seasoning and garlic powder and Old bay and shrimp.
