Chocolate chia pudding
2 tbsp chia seeds
1 ripe banana
1/2 cup plant milk
1 tbsp natural peanut butter
1 scoop vegan protein powder
1 tbsp unsweetened cocoa powder
"Cheesy" Broccoli Rice: makes for 4 people
Sauce:
200g cashews
2 tsp garlic powder
2 tsp turmeric
salt+pepper to taste
1 can coconut milk, full fat, 400ml
1/4 cup nutritional yeast
For the "pan"
1 large onion, diced
3 cloves of garlic, minced
5 head + leaves: spring onion (optional)
1 head of broccoli, chopped, bite-sized
1 head of bok choi, chopped
1 tsp garlic powder
salt+pepper
1 can of white beans, drained, rinsed, 400g
500g brown rice, cooked
Tofu steak marinate: for around 4 slices of firm tofu
2tsp olive oil
1 tsp soy sauce
1/2 tsp smoked paprika
"sunshine" smoothie
1 cup frozen mangos
2 frozen ripe bananas
1 tbsp ground flaxseeds
1 scoop vegan protein powder
1/2 cup oat milk
1 tbsp peanut butter
1 tsp cinnamon
1 tsp turmeric
1/2 cup coconut yoghurt
pepper
Banana pancakes:
1/2 cup oat flour
1/2 cup oat milk
1 tsp baking powder
1/2 tsp cinnamon
1 ripe banana (plus a few rounds for the frying)
pinch of salt
1/2 tbsp ground flaxseeds
Vegan spaghetti "carbonara": makes for 2-3 people
crispy chickpeas:
1 can of drained, rinsed chickpeas
1 tsp curry powder
1/2 tsp smoked paprika
1 tsp garlic powder
1 tbsp olive oil
bake at 180 Celsius for around 20min
250g spaghetti pasta, cooked, drained
1 large onion, diced
4 cloves of garlic, minced
fresh parsley, chopped
3 large tomatoes, chopped
olive oil for the cooking (around 1 tbsp)
2 tsp garlic powder
1 tsp italian herbs
3-4 fresh basil leaves, chopped
1 can full fat coconut milk, 400ml
big handful spinach leaves, chopped
salt and pepper to taste
Bean Spread:
1 can white beans, rinsed, drained
1 grated garlic (optional, recommend sauteing first)
1/2 lemon's juice & zest
3 fresh basil leaves
salt + pepper
1 tsp chives
1 tsp dill
1 tsp smoked paprika
2 tbsp e.v. olive oil
1 tsp garlic powder

I found your Chanel yesterday and I’m so happy I found it. I’m eating a vegan diet since January 2024 and I really struggled finding meals that suit my taste and have enough nutrients. I started working out every week and you motivate me a lot, just did a workout today and feel 10 times better!

20 minutes go by so fast when I‘m watching a video of yours! Can‘t wait for the next one, I often go back and rewatch others while waiting haha! Day 12 of my 21 day fast.First thing im eating today fresh green beans with garlic and olive oil.Mixed unsalted nuts,guacamole.Blueberry banana smoothie with cinnamon almond milk and water.Drinking water too with a lime in it.
I always watch your videos for your reaction when you try the first bite (for example 13:12). I love it ❤!

How do you make the foamy milk for the macha?

But I think most work the same! I heard really good ones about the nespresso milk frother too!

Im plant based but am struggling with anaemia, do you think its possible to heal this with a plant based diet? Also am definitely going to be trying your rice broccoli meal; 9g iron per serving, yes please lol xxx
I forgot to ask; if your happy to, do you think when you next do a what I eat in a week video, you could possibly include how you manage/ approach your meals in terms of how to put balanced meals/ snacks together, how you know how much protein, carb, fats, veg to add in each meal, how you approach other meals if you don't have a protein/ fat source in a meal & why this is ok. I hope im making sense lol; its just hard sometimes to know how much of each food source a meal should have. Sometimes I feel the need to make every meal perfect when in reality & in my head I know it doesn't have to be. Thanks Flora xxx
My iron level were pretty good a few months ago on a vegan diet. So it's absolutely possible . Now with my pregnancy I also developed a iron deficiency but what helped me in the end were tablets and also some kind of juice which you can buy in the drug store (it's from the brand rotbäckchen).
Lot of vegan food is rich in iron - boost it by pairing iron rich food with C vitamin rich food. Also, try limiting your coffee and tea intake, because caffeine is an inhibitor of nonheme(plant) iron

How do u prepare the shredded tofu,it looks delicious
Just like it was cheese, I shred it with a grater. Then on medium high heat fry with a little oil, soy sauce and a grated garlic clove until it becomes crispy. Add some water from time to time to make sure it doesn't burn. Takes around 5-10 min :)

Yes, dm and lidl import stuff from Germany :) Hungarian people have the tendency to just bring in products and not re-label them haha but At least no more waste!
I’m 68 years old and realize I need more protein in my diet, instead of using protein powder which is processed, I’ve been making smoothies with chickpeas, cinnamon,carob powder, banana and ice. Do you think the chickpeas smoothie will be as high in protein as the powder? Good luck in school, love your videos

Of course, chickpeas are amazing source & they have high iron content as well! and I totally understand why you don't want to use protein powder. I am naturally very skinny and it's hard to gain any weight or even keep it, that's why I use it..
Others I would use instead of protein powder in my smoothies:
spirulina powder
hemp seeds
ground flaxseeds
silken tofu (this makes amazing smoothie I just cannot find it in Hungary)
chia seeds
frozen peas
cashews
greek style coconut yoghurt or soy yoghurt, these tend to have higher protein content

I’ve been WFPB, SOS free for several years and my weight stays pretty stable now. When I was young I was skinny too and ate all the time! But started gaining in my 40’s, before I discovered this WFPB wonderful diet. Thanks again!
