you can, but you will be sacrificing tone. Some players use thinner picks, even guys like Sam Bush, but they are the exception to the rule, not the norm.
Just because you can, it doesn't mean you should. Better to go with as thick/stiff as you can manage for control and tone. I believe that 1.2mm - 1.5mm are the most popular/common parameters among mandolin pickers.
