If you are making this in 2024 you no longer have to scrape the cream off the oreos as thanks to shrinkflation there is hardly any cream filling in them. Sam had way more in her bowl than I did. If you are making this get a pack of regular and double stuff. Use regular for the crust and double stuff in the cake

Some things I’ve done for baking cheesecake without a water bath crack free is add a starch to the batter like AP flour or cornstarch and immediately turn off the oven when it’s done baking and let it sit in the oven with the door closed for an hour to cool it slowly before taking it out to cool to room temp and chilling it overnight.

I'm just now making your recipe and have 2 comments on it. First, that it's very easy to put together IF you don't use your stand mixer! I realized WHY when I added that 1st egg. Sheesh. I was already having doubts when I added the sour cream, because I forgot to add the sugar (I was using caster) and the sour cream with the slightly cool sour cream, and they were NOT cooperating. It took me AGES to scrape the sort-of-creamed melded ingredients off the paddle. I've now stirred in the eggs and caster sugar into a, mostly, homogenous batter. However, that brings me to my 2nd issue: I've never made a cheesecake without an electric beater, and my stand mixer is the 6-qt one, so I'm doing this by hand. I have LOTS of small lumps of cream cheese and tiny bubbles. Have I overbeaten my batter?! 😢 This is mostly my grandson's project (he's 11 and wanting to get better in the kitchen: yay! 🎉) but I'm doing the heavy lifting for now, however I'm more proficient at baking bread and regular cakes. Any ideas for me? I'll take any suggestions from anyone who's made this cheesecake, or any other recipe, and it'll be most appreciated!! ❤❤❤
It may have been over-mixed if there are lots of air bubbles. :( Was your cream cheese at room temperature? That's the best way to try to stop lumps from forming. :(

This looks AMAZING! I can’t wait to make this. Also, if you wanna save yourself some labor on the crust, Nabisco makes chocolate wafers you could sub for Oreos. That way you don’t have to scrape out the filling. I’ve used those wafers in a crumb crust before just fine
They sell Oreo crumbs here in Canada (and have for many years), just like graham crumbs. I couldn't be bothered scraping the filling off and crunching them up myself. Don't they sell the boxes of Oreo crumbs in the US?

One Q: I noticed you didn’t use parchment or grease the bottom of springform pan. So many others cut a round bottom and then attach sides. Is that necessary? Thx!
I’ve already made this several times and it’s always a huge hit but the one thing that irritates me is that no matter how thick or high I make the crust the cheesecake still goes through crust as if the crust absorbs it all. My crust never stays really black.

Hi Sam, since you aren't using the cream filling of the oreos, would it not just be simpler to use Nabisco's famous wafers? I'm a big fan of your channel and love the reoccurring "sad stand mixer" gag.
To eliminate the need to scrape the cookies you could follow the original Philadelphia Cream Cheese recipe which calls for less cookies and butter in the crust plus it doesn’t require you to put so much up the side. Without the filling of the Oreo cookies, it's just a chocolate wafter Cheesecake.
I tried with fewer cookies and less butter and still ran into the issue. Its still Oreo cookies in the crust and the cream is still in the cheesecake so I think it still counts 😊
@@SugarSpunRun I follow the original recipe and never have that issue. I've also substituted other cream filled cookies, including Girl Guides, and never had that issue. You do you, I'll do me.

Just put a parchment round in your pan and then you can slide it over to a cardboard round :)

You could certainly line the pan with parchment paper. I also will use a pie server utensil to slide it out sometimes. 😊

You could if you’d like, but I use the Oreos because it helps complete the Oreo part of the cheesecake, plus I like to eat the fillings. 🤣🤣
