Still badass Tariq made his own bun. It’s been said he’s the real deal when it comes to cooking.
Tariq was awesome
It was a nice bun, but just wrong for the job. The ratio of meat to bread is key in a burger, about 1:1 is right. That bun was about twice the size of the meat. A brioche is typically eggy and sweet - the classic burger bun is the potato bun - it's simple and not a distraction from the main flavor event - the meat.

That and NO KETCHUP. George is okay with a ketchup-based sauce on a burger, but that's as far as he is willing to usually go with it. The only burger with ketchup he was okay with was the Cuban Frita, and that was because ketchup is what has always been on that burger, and he will respect that history.

Ketchup on a burger is such a cop out - it just masks all the other flavors with sugar and vinegar. George's ideal in a burger is all about the flavor of the meat being the center of attention, and then it needs the proper ratio of meat to bread. Tariq took $50 worth of Wagyu and smothered it in ketchup - and then his bun was twice the size of the burger!
George like most knowledgeable food experts probably thinks turning Kobe beef into hamburger is a crime. Since this was a comedy bit and likely not even an authentic competition I wouldn't be surprised if that was just regular hamburger though. The truffles looked real though. I have noticed some of George's favorite burgers don't even have a condiment on one of the buns.
Grinding up meat like Wagyu and Kobe into burgers is utterly redundant and also massively pretentious.
@@bothellkenmore there’s an ep of his burger scholar show where he makes a steakhouse burger out of some very expensive beef, so he does have an appreciation for it. But yeah, if you were gonna go ahead and grind Kobe beef into a burger, slathering ketchup on it is a travesty.

Everyone has their own tastes when it comes to burgers and they're allowed to garnish them with whatever their tastebuds call for. They can buy whatever meat they have a taste for and enjoy it; no two people are alike and this was just a fun competition done for the comedy!

The thing with ketchup tho-- it's often put on poorly made burgers or burgers made with subpar ingredients because vinegar and sugar go a long way to cover bad flavors.

George is definitely more about the basics of the burger done right. A smashed burger, on a potato roll (preferably Martin's), pickles, onions, NO KETCHUP, except if it's in the sauce.
