PeanutButter Butter Cream
What you need....
8 egg whites (8 oz, 236 ml)
1 cup (8 oz, 225 g) granulated sugar
1 Tablespoon vanilla extract
pinch of salt
1 Lbs. (453 g) unsalted butter (room temperature)
1 cup ( 240 g) peanut butter
How to make this....
In a small saucepan, heat whites and sugar, stirring constantly, until all sugar is dissolved. Use low heat here!
Place the mixture in the bowl of a stand mixer fitted with the whisk attachment and beat on high until stiff peaks form, about 5 minutes.
Turn mixer to medium speed and add butter a little at a time.
Add peanut butter, salt and vanilla and blend until smooth.

Dude, you're so amazing. I tried making my first cake a while ago and I failed so miserably. Probably doesn't help that I'm super impatient and couldn't wait till the cake sheets chilled enough not to lean when stacked! Lol
Here's what you do, make the cakes before you go to bed and put them in the fridge. Then the next day you are ready to go and everything is cold.

Joshua, you taught me how to make Swiss buttercream on a free class online years ago. I've used that recipe to make hundreds of flavors, including several candy bars as well as nougat flavor. People always rave it's the best frosting they've ever had, even the ones who don't like frosting! Thank you, JJR!

Omg this reminds me of something my sister and I both did. Story time I guess.
When I turned 18, my sister made me a chocolate cake and tried to temper chocolate to put numbers on top and, I guess she also wanted to have chocolate mousse but she didn’t know exactly how to make either of them. The first attempt at tempered chocolate was alright, but when she tried to make the mousse, she somehow scrambled the eggs in it, leading to our new favorite baking saying:
“At least you’ll have tempered chocolate if your mousse has scrambled eggs.”
Long story short, she dropped the cake off at my school where I was staying overnight during an event called 24 hour comic, which is exactly what it sounds like, and a bunch of ants got into the cake before anyone could enjoy it.
(For her birthday, I made her a chocolate cake covered in plastic ants, but that’s not important here.)
Last Christmas, I tried to make gingerbread, and I added eggs when it was too hot and I actually made scrambled eggs in my gingerbread, and basically it was a pretty fun Christmas. Anyway that time it was, “At least you’ll have royal icing if your gingerbread has scrambled eggs.”
I also had to remake an entire double batch of gingerbread, but in the end, I made a pretty kickass gingerbread house. 😊
(And yeah, this is the catchphrase for the two of us, but if you find yourself in a scrambled egg situation, you can use it too.)

Question: do you guys plan out exactly what parts of the cake making process to film ahead of time and just film those bits, or do you film the entire thing and keep the bits you want in the editing process?
Hmm...we do both actually. For big projects, we plan and prep a ton. Smaller things, we just roll the cameras and see it unfold!

I prep a lot before every shoot, but this took about 6 hours to film
