What level of risk is there of the drywall cracking around the door from the stress of opening and closing (and potentially slamming) the door?

I have not seen any problems, as long as the door is installed well.

Isn't your framing needed to be perfectly straight and plumb ? It's not the case in most houses I have worked on

It's mostly design choice. I personally do not like them. They are more of a headache.

Surprisingly they do not crack. There is some metal flashing that fits inside the kerf channel. This actually makes the door stronger.
