Could you have just said the green apple is on the table? Or does it have to be the apple on the table is green? If you went with the green apple is on the table would the sentence be la pomme verte est sur la table? So no need for que?

You are correct! You could just say “la pomme verte est sur la table” which is right… however introducing relative pronouns like “que” and “qui” can be super useful if you wanna make more complete or complicated expressions
