    I've cut up plenty of tuna and have seen how professionals do it in Asia, and this kid mixes some of the Asian techniques with his own making it a very enjoyable watch. Thanks for sharing.

    Nice precise cuts. To the ppl talking about speed. Speed comes with time. Sort of like shooting. Fast is slow and slow is fast. This kid did an amazing job on a hella expensive fish.

    I’ve seen many videos like this cleaning and fillet the fish but, this kid hands down this is second nature to him. His approach is like no one else I’ve seen getting the same great results or even better.

    For his age, he is good in what he does. But professionals in this business (Japan) have specialized ultra sharp knives and the fish (in order to preserve freshness) is placed in ice as soon as they reach the boat or as soon as it reaches the fishing port. Still...his skill is admirable.

    We are acehnese people never eat raw fish, we don't like raw fish to be consume directly, We always cook the fish until cooked well for consumption.
    Don't think it's cut to eat sushi. This kid's skill in cutting fish is very good, we are proud of you.

    Those r some nice cuts with that blade. Nice! I saw videos of where they use different knife but remove skin in a different way (professional) I thought. But they r on I think land with water and hoses. U have a alot of hand skills

    Definitely not the best method or skill I’ve seen but without cold water and ice I’m assuming efficiency is more important then quality of cuts and being precise. Well done

      They will not make a sushi from this fish... they will cook it and wash the fish before it.. so its fine

      @@gnf_clsh yeah clearly not for sushi, I mean that keeping it cool and clean would preserve quality, and obviously cutting each piece correctly would mean the best pieces are preserved and the worse pieces that are suitable for soup or stock are all kept on a single cut meaning the fish could be used more effectively

      @@sonyad924 yes, we don’t have tuna here, but I can do something similar with most fresh water fish. I’m not really sure what my personal skill has to do with it though, you could learn to do exactly what he just did with a few weeks practice.

    He's good but makes one mistake, he cuts towards his body. Never pull a blade towards yourself, the blade is always to move away outwards from your body.

      asians do it differently with skill...remember the Japanese saws that cut on the "PULL" stroke while the west does it on the "push" stroke similar concept here pull is better.

      @@10OZDuster Well in my decades of cleaning fish, I know a blade is never the same sharpness tip to end. Why you push the blade away instead of pulling it towards yourself is because it can cut at a different rate at anytime.
      Ps The knife he was using was dull. That's the same sharpness as I use.😆
