I think you are missing Rockingham 1, Dover 2 (which will NEVER unlock for some reason), New Hampshire, Bristol, Watkins Glen and Sonoma that I know of.
No Bristol, martinsville, Watkins Glen, or Sonoma. So no road course or short tracks

yes
the only one trophy that you will never get in career mode is the fall dover race trophy. there is no dover 400 night trophy. in order to get that trophy you need to win it in quick race mode or create a season mode custom schedule and select the actual race. I think it is the MBNA America 400 event. That is the only trophy you will not get in the career mode trophy case.
