In the context of carbohydrate chemistry, specifically when forming a glycosidic bond between two sugar molecules (such as in the synthesis of disaccharides), yes, the process generally involves the removal of a molecule of water (H2O). This reaction is a type of condensation reaction. Note, however, that not all reactions where there is the loss of H2O we end up with a glycosidic bond.

whats the diffrence between a C-glycoside and a O-glycoside?
The main difference between C-glycosides and O-glycosides lies in the nature of the bond between the sugar and the aglycone: C-glycosides have a carbon-carbon bond, while O-glycosides have a carbon-oxygen bond.
