At 3:31, can the top alpha glucose (branching from main chain) bond to more glucose from it’s right side? There seems to not be an -OH so it wouldn’t glycosidic link from the glucose right side, right?

Yea, if you want a linear chain you would have to invert every second monomer. In this case it’s not a linear chain which is why it wasn’t flipped- still correct. Typically however, one would create a linear chain (with inverted monomers).
I have a question please, why Cellulose is insoluble in water?
It is because they have many glucose monomar joined together
