What I love about Korean food is how all the vegetables are treated with love and attention. It's so easy to make a Korean meal vegetarian, even though there are so many great Korean meat and fish dishes, because all the vegetables are delicious! In Western cuisine, the vegetables are far too often just an afterthought and the meat gets all the attention.
Bonus points for using the stems! Everyone just throws them away. Also love me some tofu (not a vegetarian), and I can make this without having to drive two hours to h mart.

That looks so simple, very fast, low carb and delicious! I must say, you are one of the very few people, cook on tv or whatever that washes vegetables before using them. People just don't wash them - Cabbage, cauliflower, lettuce etc. I believe there is still a necessity to do so. Also, you are always washing or wiping your hands. Excellent! A plesance to watch!.
