I made this entire meal prep today and the first meal I put together was more delicious and filling than I expected it to be--honestly I didn't think a cabbage steak could be hearty but it somehow was. The standout was the pistachio pesto--one taste of that and it was difficult to stop myself from immediately boiling water for pasta.
Yay! So nice to see you made it all and it was delicious and filling! The pistachio pesto is such a fun condiment. I love it on pasta, drizzled on roasted carrots, or just on toast!
@@misscogito9865 Roughly 2.5 hours including cleanup (no dishwasher), and I have bad carpal tunnel so cutting hard veggies like cabbage is a slow process for me.
Nisha, you are honestly so underappreciated. It is one thing to create delicious recipes but you do SO MUCH MORE! These videos have planty of useful tips and modifications, are shot and edited beautifully and never lack a good dose of humor. Plus, the time and effort you put into making a blog post AND a pdf version of it with all the modifications is just incredible. I just love your energy and commitment to spreading good (plant-based) food around the kitchens of your subscribers! . Anyways, sending you a ton of love! Stay safe and have a great rest of the week!
That was beautifully said Margaret! So many people are so quick to criticise others but sadly there aren't as many kind words shared, this was lovely and beautifully put! :)
I've noticed my grocery bills skyrocketing. Not because I'm shopping more, just from inflation alone. These creative videos of meal prep through the week for budget meals are so important! Thanks Nisha!
I made the entire meal yesterday. It took me 2.5 hours, but it was totally worth it! I was blown away by the punch of flavors with the sauces. I found myself snacking on the cabbage dip straight from the jar it is SO good!! Everything turned out amazing. Nisha, this was exactly what I was looking for. Thank you for making my week!!
gosh darn it! give this woman an award fr fr!! she is such a talented cook and her videos are literally top tier lessons that we all should pay for tbh. im just so impressed with your videos. i cant even imagine how long this takes! thank you so much, im so grateful girl 😘
I did this meal prep plan today and WOW! The mustard maple marinade for the tofu might be my favorite way to prepare tofu now. I never would have thought of creating a sauce from cabbage but it works and is so flavorful. Sunday Blues can be a drag, but now I have all this great food in my fridge to look forward to this week. Thanks, Nisha!
I was scratching my head about what to do with cabbage in my fridge! This was perfect! I used peanuts instead of pistachios for the spiced nuts and it worked great! I didn’t have any cashews so I used the bean broth instead from the chickpeas in the cabbage sauce and another hit! The tofu looks so good…
I usually don't care much for sponsors but Aldi is the best. Grocery shopping for organic food or vegetables/fruits etc doesn't have to be expensive and they prove it. Thank you for the ideas, I love love love your channel.
I made this today. Aldi price was 67 dollars, they were out of tofu and meatless meatballs. I went to.wegmans and got.them for 16 dollars and change...so total recipe cost about 83 dollars for the meals, although it seems like there is much more than ten meals. the cabbage steaks alone is 9 meals and the meatballs/kale/linguine is 5 more meals. that would come to 5.92 a meal for 14 meals...still a great price!
I love the idea of not having to eat the same thing every day for a week, but using the same ingredients. Your videos always help me and your recipes never disappoint! Thank you Nisha!
AMAZING!!! Last week, I followed your step-by-step PDF guide and it turned out absolutely delicious! Your idea of using different combinations of components for each meal has completely blown my mind. I think I'm about to embark on a new era of eating in my life. I know these videos take an enormous amount of work so I feel greedy even saying this but, if you are unsure what video to do next, another video like this with different types of components would be so incredible. Thank you for putting out such wonderful content.
I have to say, you bring both an obvious passion and brilliance in your approach to food. I also tremendously respect your new partnership with Aldi. For families living on a budget, they are a lifesaver. I truly hope your hard work is paying off, because your work is phenomenal.
You came through again! Nisha, THANK YOU for your hard work making these! I’m living through another happy week of your meal prep + red lentil curry, and am totally doing this one next week! Thank you so much! I’m becoming more and more plant-based, and in such a delicious way. Hearty thanks.
Haha thank you for the kind words! So glad you’re already enjoying my other meal preps and even better, you’re becoming more plant based. That’s amazing to hear!!
I just tried this and oh my gosh was it good!!! I fed 4 adults tonight and everyone loved it. I need to use less apple cider for the tofu glaze, but it was delicious. The sauces were incredibly good and I will definitely make those again. The lemon went well with everything. I am absolutely full and it tasted delicious.
I tried this entire meal prep today and it was fantastic! I have never really done meal prep before and find it intimidating. This plan was easy to follow and the foods are all very flavorful, like I’ve come to count on from Nisha’s recipes. I checked out the new-ish Aldi in my town, which I had never visited before. (Hope they'll sponsor more of your videos!) The prep took me closer to three hours (well worth it), but I think it would have gone faster had I started with a kitchen that was tidier and better organized before I began. I would love to try more meal prep plans like this one. Maybe one for all Indian recipes! Thanks for helping me feel more confident in the kitchen. I’m so excited to eat on this food for the next few days. NOM NOM.
hey, so, I'm brazilian and did your chickpeas toasted but gave it a twist. i put some cashews and some other nuts, and seasoned them with oliver oil, paprika, chimichurri and salt. when toasted, i put lemon juice on top of it. 😋 my family loved it and they are obligating me to do them every time. thank you!

Videos on how to mix and match some prepped foods all week are my favorites! I used to cook a big pot of something to eat all week to save time, but this is SO much better! Thanks so much for these great ideas.
Love it! I made this meal prep yesterday. It took me 1,5h for cooking and 30 mins for clean up! I still cant believe that was enough to set me up for full week of lunches and dinners. I eat my first meal today but cant wait for the rest of them. Thank you! And I hope you will make more similar videos 😍
i have been cooking all my life (all of my family have been chefs at some point in their lives) and have been vegan for 7.5 years. but when i need inspiration for delicious+healthy, i come to your channel. that pistacchio dip with cabbage steak, wow. thanks for all yourwork Nisha!
Immediately after watching this video I spent about 1 hours 20 mins making this because I had just bought cabbage on a whim and it felt like a hugely amazing significant coincidence as I buy cabbage maybe 3x a year. I had nearly every single ingredient on hand. This is AMAZING and very easy to do using simple pantry staples. Our favourite also has been the pesto (I used cashews instead of pistachio and added some hemp hearts). Couldn’t help myself but to include every single thing made in a giant fraken-dish. 10/10!
This is undoubtedly the BEST and tastiest crispy tofu recipe I’ve ever encountered. It was easy to make for a novice in the kitchen like me. I made it and ate it with salsa. Tasted awesome. Thank you
Thank you!!!!! The building block method is SO smart and I'm so excited to do this. It's so hard to care for yourself and save money when you're too tired after work to cook a full on meal. But having these pieces pre-made keeps things satisfying, nutritious and affordable!!! 💜💜💜
You are a genius with meal prep. I've watched all your meal prep videos and always make one/two of your sauces, potatoes & rice, an assortment of veggies and beans made as well as the lentil filling to your butternut squash recipe as part of my meal prep. it has helped me lose so much weight and stay on track!! I love your channel ❤️
Nobody told me!!!! How wonderful roasted cabbage is. When Nisha was cutting up all that cabbage, my thoughts were who is going to eat all that cabbage. Oh, my goodness...it's terrific. Even my son came and inhaled two of the rounds. This is the wonderful spot of my day! Thanks.
She was not kidding about the cabbage sauce being amazing. I made this entire meal prep last night. Both sauces and the glaze were SO GOOD. I did the cabbage over rice with sauerkraut and cabbage sauce combo and it was delicious and most importantly filling. After that meal and a goodnight sleep I woke up feeling rejuvenated. Love this so much! Thank you for posting.
I love meal prep and I love when I know that I am eating healthy and I love it when I know that I am multi-tasking So those are three checks for me! Also, loved the variety and the fact that you added a little bit of pre-cooked food(vegetable meat balls) which is how realistically people think about food!
Thanks for sharing these delicious $2 meals. It's incredible how you've managed to create such tasty and cost-effective options. I'm definitely trying these out to save some bucks while still enjoying great meals.
SO SCRUMPTIOUS 😍 I just make this full meal prep and everything is delicious. I loved the way you formatted the PDF recipe guide with the “Order of Operations” explaining what to prep and when. That saved me so much time! 👌🏻 I was able to make everything in about 2.5 hours which is amazing since there are 8 components here including toppings/sauces. I love this format of video and recipe guide. Thank you Nisha!! 💖
Thank you for posting this very effective and easily do able meal planning video. I’ve given up on meal planning bc I get an bored eating the same foods over and over again. But you’ve wonderfully shown that variety is key and it’s easy to do with just a bit of organization and prep time. I’m going to make these meals this weekend for work next week. Thank you so very much! 🙏🏽😊
Nisha, I think your meal prep ideas are Fabulous! ... and, for the life of me, I don't understand why you are not at 1M subscribers yet. I mention you to all my family and friends. I look forward to more of your inspiration and wonderful ideas.
Thank you for sorting next week's meal plan for us! I use many of your meal preps for weekly meal planning and I love how you lay everything out so clearly for us.
This is so helpful! I'm a student and I currently struggle with finding time for cooking because of all the upcoming exams. But thanks to this video I got motivation and I am able to enjoy not only good but also healthy meals! Thank you so much, it's such a game changer.
Hi Nisha! I bought two of your instapot cookbooks (one to gift to a friend). I love using your mushroom risotto recipe when my boyfriend's mom comes over. I tell every plant-based, health conscious person in my life to look you up! I LOVE your simple mix and match meal prep videos , truly life changing. Please continue to make more!
This is SO INCREDIBLE of you!!! Thank you for taking the time to take the thinking out of meal prep in a budget friendly vegan way! You are my favorite person to get food inspiration from and I was literally just going to Aldi, so you took the guess work out of my trip. Thank you again!!
I made this last weekend and am so happy to have such healthy food ready in the fridge. I am slow, so it still took me about 4-5 hours :) I hope you publish more like this!
This is one of the most useful vegan meal prep videos I've ever watched (and I get through a lot 😂) I never usually comment but I'd absolutely love more videos like this, thank you so much Nisha!!
BEST meal prep video ever watched, meal prep always seems so overwhelming but your video has me so excited. I usually get so tired of the same meal over and over again so this is a life saver. Also amazing that you shopped at ALDI for all of this, that is my go-to store!
I love this idea for meal prepping! So many times I’ve seen a week of the same meals but this gives you so much more variety that it actually encourages you to get creative with how you mix things
I can’t begin to tell you how grateful I am for you for making a free affordable grocery list and meal prep. Thank you so much I’m sharing this with as many people as I can ♥️💕🌱
I love this style of video. I get so confused on what to but what to make how to mix things up how to even eat healthy etc. Etc. Look forward to more videos like this in the future 🙂
Love your videos! I am not a plant based eater, but I am trying to incorporate some more plant based meals into the rotation of meal planning. I just made the pistachio pesto as well as the cauliflower soup from a previous video. And let me just say they are both fantastic! The soup is my new favorite and the pesto is so bright I can't wait to put it on pasta tonight! Thank you!
I'm in uni and have had a tough time cooking due to limited time (and money)... thanks for this!! Couldn't have been timed better because I'm just starting a new semester haha
The PDF was incredibly helpful. Meal prepped today and it was so rewarding. Having a variety of meals you’re able to create from all this is the best way to meal prep. So appreciate all your hard work in coming up with this to share!
I wish you would do one of these every month! just showing which ingredients you bought, how much you spent and how you prepped. would be super useful!
Really useful video! Thank you so much 💚 Been vegan for nearly 11 years now for the animals & thanks to videos like this, I have learned how to cook healthy AND tasty 😋
Hey Elizabeth! Congrats on your new plant-based journey! And yes, fun and easy meal prep ideas are a big part of making a plant based diet sustainable and doable :)
O My god you don’t know how much I needed this girl I love you. I am moving to the UK for my higher studies and had no idea how will I manage my time with cooking and studying this has helped me so much. Thankyou so so much love !!❤
Thank you so much! My state just recently got an Aldi and my fiancé is Orthodox Christian and right now he is doing the Lent fast so it’s all vegan and it’s been so hard for me to budget both his fasting diet and my regular (non-vegan) diet and then meal prep it all for the week. But this video really has helped and I’m so excited to see how much it will cost at Aldi. Especially with the price of everything going up, thank you so much!
This is awesome! I haven’t shopped at Aldi in years! I am definitely going back! Can’t wait to do the prep and try these recipes! Please do more videos like this! I love that this works for just one person, as my family isn’t ready to eat plant based food yet.
I tried out another of your meal prep videos.. first time building blocks prep like this. It was awesome and such a nice change from both 'meal planning' and regular 'meal prep'. I did it in an evening only taking a couple of hours and there were barely any dishes to clean with just using sheet pans and the instant pot... such a difference!! Definitely keep these meal prep videos coming!
You’ve done it again! First of all I have used your old meal prep video as a base for all my meal preps. When I was following this method regularly. I lost weight, my groceries were always under $100 for me and my husband and they are amazing tasting. Not to mention I was scared to cook cabbage and this was amazing! I don’t know how your mind works so brilliantly. Your meal prep videos continue to be a favorite and hope you make more. Also your nacho cheese! The Buffalo quesadilla and the crunch wrap supremes were some other favorites over the past couple years
I've made this whole meal prep 3x and parts of it several other times. Thanks for these recipes and this video - I love the flavor, the cost, the variety!! Keep the recipes and ideas coming!!
Nisha! This is AMAZING and came at the perfect time! I'm in crunch time for the February LSAT 😵 which, unfortunately, means I need to scale myself back in the kitchen during the week. This is so incredibly helpful. Thank you, thank you for your hard work and creativity!
Wish we had Aldi! I followed your video and pdf for this meal prep today and it turned out really well! My skeptical husband even complimented the "cabbage sauce". Thank you!
I literally just did a vegan week challenge for my channel and I wish I had've seen this before then. This is probably what I shouldve done. Meal prep makes life so easy!
Your step-by-step video and PDF Guide has helped TREMENDOUSLY!! Thank you so much! We often times desire to change how and what we eat, but often times struggle with knowing how to get started! I am over thrilled with trying this new way of eating for myself and family! Bless you!
Thanks so much for this Nisha!! I would love love LOVE to see a compilation of all your everything sauces up on the blog! Unfortunately some of the items for this meal prep are expensive in the Southern Hemisphere at the moment so I would love to see a collection of your sauces in one place so that I can use it as a reference according to the seasonal offerings :D
These look so great! I've recently had to return to office after two years working from home. I love this approach to meal prep and look forward to giving it a try.
You saved my week, Nisha! I wasn't feeling the cooking at all yesterday and just quickly skimmed throught the beginning of the video to see which ingredients you're about to use, rewinded to the beginning and started cooking with you without even checking what kind of foods we'll be preparing :D I ended up having lots of fun! "Put the roasted cabbage in the blender" "...Mmmkay, I didn't see this coming but I'll roll with it!" Everything turned out delicious! These are my favourite type of videos from you. Thank you thank you!
These all look so tasty- such great ideas and thanks so much for including Aldi and budget friendly options! You are so creative - love and appreciate all that you share! Thank you!
Thank you Nisha for all these meal prep video and the PDF guide, they are helping me a great deal. I don’t have to eat the same thing for lunch every single day and week! This is my first week following your meal prep and I am so excited for my lunch already!
Nisha, your creativity astonishes me. You seem to come up with so many ideas... I've only been vegan for a year and I feel very much that I am still learning a whole new way of cooking. I don't use many substitute meat/dairy products or many ultra-high processed foods, so I figure in the end that it will be worth persevering over my long apprenticeship of learning new ways with food! I love this emphasis on the budget in this video. I'm in the UK, and while we have Aldi here, I don't think I'd find things as cheaply as you have been able to do, although I'm always willing to be proved wrong so I will definitely be checking them out here for this kind of range of food products. Another thing is that you have access to so many organic foods and it's not easy to find as many as I would like on a budget. But I'm so grateful for this video. You've given me some great ideas and you've helped me expand my experience of food and how to make it so much since I began eating vegan foods.
Really love these meal prep videos! It also really helps how they're clear and straight to the point. The pdf guide is great to have and refer to when I'm not feeling inspired in my meal prep, thank you!
I adjusted this meal prep as I only needed it for one person and 5 meals. I took a few liberties but it worked well! I only used one cabbage - 4 steaks and the rest chopped into small pieces. The steaks were coated in harissa and pieces in paprika and onion seasoning, all roasted plus oil etc. I made one cup brown rice pilau style because...Pakistani comfort food. And tofu but didn't have maple syrup so used regular golden syrup. I made sauce using cashews and parsley. Added a bit too much water but it tasted good! Pretty happy with myself.

Pro tip, you can airfry the chickpeas to save more time. I set the air fryer to 375 and roast them for 8 minutes, toss, then another 8!

Nisha, I think your meal prep ideas are Fabulous! ... and, for the life of me, I don't understand why you are not at 1M subscribers yet. I mention you to all my family and friends. I look forward to more of your inspiration and wonderful ideas.
You’re very sweet! Thank you for recommending my channel ☺️ and so glad you enjoy my meal prep ideas!
Thank you for sorting next week's meal plan for us! I use many of your meal preps for weekly meal planning and I love how you lay everything out so clearly for us.
That’s so great to hear, Jeanie!
Thank you so much! I’m becoming more and more plant-based, and in such a delicious way. Hearty thanks.
I LOVE all of this especially the graph showing how to save time
This is so helpful!
Holy cow, I came back to this channel after about a year, and damn your video production went way up. You found your voice as well. I love this!
this is one of the best meal prep videos i have seen. The food actually looks good and i like all the ideas.
I love Aldi. They consistently have good stuff in their dumpsters.
I love when you do videos on meal prep.
This is SO INCREDIBLE of you!!! Thank you for taking the time to take the thinking out of meal prep in a budget friendly vegan way! You are my favorite person to get food inspiration from and I was literally just going to Aldi, so you took the guess work out of my trip. Thank you again!!
I'm not sure how I ended up on your channel, but you've inspired me to want to eat more plant based recipes, maybe one day entirely plant based.
You are very shining and positive vibe personality, is always nice to see your videos, and of course taking advices for cooking!
These vegan batch cooking ideas are gold! More please. TQ!!
Girl you got taste!!! That is what sets you apart!
Glad this was helpful! I have several more meal prep and similar videos on my channel for your future inspiration :)
Thank you!
Thank you for the lovely feedback, Nicole! So glad you enjoyed both the cauliflower soup and pistachio pesto (I love how bright it is too)!
Your Video Quality is on its way up! So seamless
that’s so nice to hear! Thanks Peter!
@@RainbowPlantLife of course!!! Job well done. Truly amazing videos
I'm in uni and have had a tough time cooking due to limited time (and money)... thanks for this!! Couldn't have been timed better because I'm just starting a new semester haha
Love it when the timing is just right! Good luck with your new semester!
I made all these and they were super easy to make and delicious! I would totally buy a book with your meal preps, please write one! ❤️❤️❤️
So awesome to hear! The best of both worlds!
LOVE this meal prep and ideas video. SO helpful on my new planted based journey. Thank you
Hey Elizabeth!
This is just what I needed as I try to budget and cut my food cost down. And everything looks amazing! Thanks!
The Buffalo quesadilla and the crunch wrap supremes were some other favorites over the past couple years
I'm trying this budget friendly meal prep! And from the first meal, it's pretty surprising. Unlike de smell it tastes great!
It looks sooo good! I will try it as soon as possible :))
I’d love more like this! Thank you! I make at least two of your meals every week and have been doing this for about a year!
Your step-by-step video and PDF Guide has helped TREMENDOUSLY!! Thank you so much! We often times desire to change how and what we eat, but often times struggle with knowing how to get started! I am over thrilled with trying this new way of eating for myself and family! Bless you!
Your meal prep videos are some of my favourites that you do!!
☺️ yay! we definitely will have more meal prep content in the future!
Aldi is my go-to grocery store. Excited to see another video featuring meal options on a budget!
That’s so great to hear! Glad you’re excited for this video 😁
As a new student in the States, this one is soooo helpful!
Lovely to hear that! Good luck with your studies, Shweta!
We did this meal prep on Saturday and the flavors are just amazing. Thank you so much for breaking it down and making it so straight forward ☀️
Thank you!
Thank you so much for your sweet words! I love finding ways to get creative in the kitchen and glad it’s helpful for you!
This looks like the quickest, cheapest and tastiest vegan meal prep I’ve seen so far. I can’t wait to try. 🥰
Thank you Nisha for all these meal prep video and the PDF guide, they are helping me a great deal. I don’t have to eat the same thing for lunch every single day and week! This is my first week following your meal prep and I am so excited for my lunch already!
This was so helpful. I'm so grateful!!!
Really clever how you did this. So many meals, Cheap but also saves soo much time!!! Great especially when your tired.
Really love these meal prep videos! It also really helps how they're clear and straight to the point. The pdf guide is great to have and refer to when I'm not feeling inspired in my meal prep, thank you!
Thank you for the great feedback! Glad these are helpful in inspiring your meal preps :)
