I have had to make other subs already in that recipe. No Asian markets and the bitter melons are ready in the garden. A friend from Guyana gave me seeds but no recipes.
Hi Tanisha, I have successfully fermented the black beans . I made a paste with 1 chilli n few garlic while grinding. I sauted it in oil with lil brown sugar and salt. I am going to preapre the sauce following your recipe but cannot use all the bean paste as i amnot sure about the outcome (because i fermented the beans at home). So want to try with 1/4 portion ( 2 cups cooked paste). So my question is how long i can store this cooked/ sauted paste in fridge and should i cover it with oil to prevent any mould? Please do answer my query. Thanks 🙏
The beans will last for up to a year under these conditions. Unopened black bean sauce will keep for up to two years on the shelf, and for several months once opened. Store opened jars and bottles of sauce (tightly closed) in the fridge. Just use beans whenever you want and closed proper and store. 😊
If you fermented this beans at home then I will advise you to always check the beans condition and store in tight container. The beans which I use in this video can last upto 6 to 1 yr or longer period.
I tried fermenting the beans and it was fine for the first three days, but then one of my family members opened the pot i was storing the beans in, and it seemed a bit rotten, i made the sauce with it anyways but i was afraid of eating it, is it okay if I consume it?
The fermenting that makes these beans is a lengthy salted and air dried fermentation process. I hope you DID NOT eat those beans. Fermented beans are shriveled, a little firm and salty to the taste. They should not be smelly to my knowledge.

They have a very salty, pungent flavour. To make Fermented Black Beans, cooked black soybeans are fermented in the water they were cooked in, then drained and mixed with salt, garlic and spices and allowed to dry in the sun. I will share the detail recipe but it will take time to post😊

Hi, I found fermented black beans and the ingredients are Black Bean, Salt, Soy Bean Oil, Sugar, Water, Sesame Oil, Chili. So do I just drain it and follow the steps? Or can I just move on to blend the drained beans?
Soak the beans for 2/3 min. simply rinse, drain, then followed the other steps. Saute beans with all ingredients, then make a paste. Don't add salt. Store in an airtight container once opened finish within a month. Unopened container can be stored longer period. It's take time but you will love it! 😊
It's depends on dish, I suggest you to use Hoisin sauce instead of black bean paste. Red beans and fermented black beans are completely different in taste.

These black beans are salty, savory, and some say slightly bitter. Don't worry about the taste.. use in stir fry vegetables or meat then you will feel that it's turn so well. You will love it!
White vinegar and rice vinegar their flavors are completely opposite. Rice vinegar is incredibly sweet and delicate, while white vinegar is sour and harsh but you can use just add little bit of sugar to balance the flavour. Try to use white wine vinegar or rice wine .😊
