    With the outstanding spice flavor, super soft and moist texture, and velvety cream cheese frosting, these carrot cake cupcakes are a winner. I have quite a few videos here on carrot cake, using almond flour, ground sunflower seeds and ground walnuts. They are all delicious, but this is the first time, I am using coconut flour and I especially love the soft and fluffy texture. So easy to make without any tools and piping required. And you can enjoy it guilt free.

    NUTRITION INFO PER SERVING
    Total Carb = 3.9 g
    Dietary Fiber = 1.1 g
    Net Carb = 2.8 g
    Calories = 291
    Total Fat = 27.2 g
    Protein = 6.1 g
    DRY INGREDIENTS
    Coconut flour = 60 g (1/2 cup)
    Other flour options;
    1. Solely Almond flour = 240 g (2 cups)
    2. Combo of Almond flour = 120 g (1 cup) + Coconut flour = 30 g (1/4 cup)
    Monk fruit = 50 g (1/4 cup) (You can also use any keto friendly sweetener)
    Baking powder = 8 g (2 tsp)
    Baking soda = 4 g (1 tsp)
    Salt = 1/2 tsp
    Ground cinnamon = 5 g (2 tsp)
    All spice = 4 g (2 tsp)
    Grated carrots = 110 g (1 cup)
    Chopped roasted pecans = 60 g (1/2 cup) (OR any nuts of your choice)
    WET INGREDIENTS
    Whole eggs = 3 large (173 g)
    Whipping cream = 190 ml (2/3 cup + 2 tbsp) (OR yogurt/sour cream at the same ratio. For dairy free option, you can use coconut cream at the same ratio. You can also replace the whipping cream with any keto friendly milk. However, due to the difference in consistency and content, you need to reduce the amount by 15% and increase the fat content i.e., the butter or oil by 70%.)
    Coconut oil = 60 ml (1/4 cup) (OR any keto friendly oil)
    Vanilla extract = 1 tsp
    DIRECTIONS
    1. Preheat the oven at 340F or 170C.
    2. In a bowl, add the dry ingredients (except the grated carrots and pecans) and mix with a spatula until well combined.
    3. Add all the wet ingredients and whisk until well combined. Then add the grated carrots and chopped pecans but reserve a bit of each for topping. Mix until well combined.
    4. In the video, I used small and firm paper cups with 2 1/2-inch diameter, so I got 10 servings. Fill the batter into the paper cups until 3/4 high. Then spread evenly.
    5. Bake for about 20 minutes at the middle rack or until a toothpick comes out clean.
    INGREDIENTS FOR CREAM CHEESE FROSTING
    Cream cheese (softened) = 225 g (8 oz)
    Powdered Allulose = 60 g (1/2 cup) (OR any keto friendly powdered sweetener)
    DIRECTIONS FOR CREAM CHEESE FROSTING
    1. Mix the softened cream cheese in a bowl until soft and creamy.
    2. Add the powdered sweetener and mix until smooth and creamy.
    3. Chill until needed.
    4. Once the cupcakes are cooled, scoop a big dollop of the cream onto the top of each cupcake.
    5. Use an offset spatula or spoon to spread evenly. As we're going for an easy and rustic look, there's no need for perfection.
    6. Top with the reserved chopped roasted pecans and grated carrots.

    I made these a few hrs ago. I followed your recipe except for the frosting. I used less cream cheese and added 2tsp freshly squeezed lemon juice. This tasted so good, if I hadn't made it myself, I would not believe it wasn't the original carrot cupcake made with flour! How many times you are my bff😂 Thank you

    I made this and used 3/4 cup coconut milk yogurt and all almond flour with some ground up walnuts
    I also put it in a baking dish set the oven to 325 and cooked it.
    Then I used dairy free cream cheese mixed with 2 tablespoons plant based butter a sprinkle of lemon powder and about 1/4 teaspoon of vanilla with 1/8 cup Splenda monk fruit sweetener....
    Oh was this really good!! I really appreciate all your time to make good things that are alternatives to the normal

    This looks divine! I love how you are kind enough to give us all the different substitutions; that is a lot of work and so thoughtful! I don't have any whipping cream on hand but you gave the keto friendly milk substitutions and told how to adjust the amount of liquid and fat to make that sub. Thank you so much!!!     LOVE those cupcakes 😋😋
    I made it today & they are fantastic. I used only coconut flour & doubled the monk fruit & added a few stevia drops as well.
    Even then it wasn't very sweet but perfect for me. The cream cheese frosting is fabulous.

    Hello Elise. How does a 1/2 cup coconut flour make 10 cup cakes. My measurements never work out like that. I know you say fill the cups 3/4 full and smooth, but a 1/2 cup coconut flour seems like a small amount to make 10 cup cakes the diameter of 2.1/2 inch cups. Thanks

      Coconut flour is very absorbent, so it will bulk up after absorbing all the liquid and eggs. Hence, a little goes a long way. Yes, 60 g of coconut flour for this recipe will yield 10 small cupcakes.

      @michaelwalters5861 It depends on the ingredients. If you're making a chocolate flavor, it is necessary to adjust the moisture because cocoa powder acts as a flour. As I mentioned before, I have provided options for coconut flour, almond flour, and a combination of both flours for almost all my cake recipes (see description box).
