You are the only ones I've seen who don't use a stand mixer. Love that! You are the proof that it's not necessary to have one of those to make amazing things. Just a hand mixer and some spatulas, and some wonders as a result. Thanks for the recipe!

As an italian, I suggest you to toast in the oven, or on medium heat, a little bit the almonds. It will bring much more flavour to the cake. Enjoy!
