🇫🇷 French Classic Chocolate Cake Recipe: Rich, Soft and super moist. (Gâteau Au Chocolat, ASMR)

  • Hello friends! Today we're going to share with you how to make a classic French Chocolate Cake (Gâteau Au Chocolat).
    Who doesn't love one bowl cake recipe, if we can make a delicious dessert quickly and easily, why not? Try this rich and soft, moist and fluffy Chocolate Cake.
    If you are a chocolate lover. This is the one you’ve been dreaming of! We always look for some chocolate dessert to surprise my family and ourselves. Since we made it, the compliments continued. This cake is perfect to make for any holiday, even birthday, especially since the ingredients and tools required are simple and minimal.
    This recipe idea is from Pierre Hermé, but we adjust the instructions a little bit to make it more simple. One bowl, minimal ingredients, and just follow this easy recipe, then you will get a fluffy, tender-moist chocolate cake! Enjoy. :)

    How to make French Chocolate Cake
    Gâteau Au Chocolat Recipe
    📍 Cake Tin Size: A round cake tin, the diameter is 15cm/6”
    ✎ Ingredients
    70% bittersweet chocolate 125g
    unsalted butter 125g, cut into small cubes
    granulated sugar 100g
    all-purpose flour 35g
    egg 2, medium size, room temperature
    a pinch of salt
    more butter and flour to grease the cake tin
    ✎ Instructions
    1. Butter the baking pan and flour the pan, then shake it around the edge, next invert the pan and tap out any excess flour.
    2. Crack two eggs into a bowl, and whisk them slightly, set aside.
    3. Use a knife and carefully shave off or chop the chocolate into small pieces.
    4. Put the chocolate and butter into a large bowl, and place on top of a saucepan 1/3 full with simmering water over low heat, use the hot water bath to melt them. Once melted, remove from heat.
    5. Add the sugar until perfectly amalgamated.
    6. Add eggs in two batches, mix until the mixture is incorporated each time, then add the remaining egg, mix again until well combined.
    7. Sift the flour and salt into a bowl, mix until it disappears from the dough. but do not over mix.
    8. Pour the batter into the pan, and smooth the top with a spatula.
    9. Preheat the oven to 180C, bake for 22~25 minutes. Once baked, take out the cake and place it on a wire rack, let it cool down.
    10. You can lightly dust with powdered sugar, or pour the ganache evenly over the top, or even put some fruits or whipped cream as you like.

    I just made it and it turnt out delicious even though I made a mistake. I used a baking form with a diameter of 30cm (twice hers) and thus used double the ingredients. But maybe I should have payed more attention in geometry class cause little did I know that twice the diameter of a circle does not mean that the area is twice the size but four times larger. 😅 So my cake is very thin. Just to warn you so you do not make this mistake as well because I think 15cm is a rather small baking form so not everyone might have one of these at home. However it still turnt out great, just doesn't look as good. And because it turnt out so great I think if you'd really like to you could also use a baking sheet for this if you wanted to make it in larger quantities for a party or whatever.

    Do you have to wait for the chocolate and butter mixture to cool down before adding eggs?

      If you make the cake in summer, maybe you can cool down slightly. But usually we don't melt the chocolate in high temperature, so it's ok. Once the chocolate removed from stove, its temperature will continue to drop, after added the sugar, the temperature will be lower. And add the egg will keep the temperature down. 😊

      Hello there, we don't have microwave, but as we know you can use microwave to melt them for 15 seconds at a time and stir after each time period until smooth. 😊

    Or brownies are made like these french chocolate cakes?
    The procedure is almost same apart from cocoa powder, flour measurement and whipping of eggs and sugar

      Hello there,
      Many cake recipes and ingredients are similar, but different amounts will create different results. Like magic.^^ Actually, fudgy brownie and French classic chocolate cake have pretty obvious difference in taste. The fudgy brownies are slightly sweet but have layers of cocoa flavor. The classic French chocolate cake is very moist and tastes elegant. Both were delicious. 😊

    Hi! If I want to incorporate ground hazelnut or hazelnut flour into the recipe, how much can I use so the consistency of the cake stays the same? How would I have to adjust the other ingredients?

      Hello there, Self-raising flour is flour with baking powder and a pinch of salt. Self-raising flour contains leavening properties. There is no baking powder in this recipe, so self-raising flour is not recommended as a substitute for flour. 😊

    I tried making these today but they do not have a crispy edge the top cracks like a fudgy brownie and the interior is more moist and cake like instead of gooey. Please help me understand why. Was wondering was it too much egg mixture? The 2 eggs I used add up to around 100g.

      Hello Audrey, It may be baked for too long to cause the top become too dry and crack.Once you get this thinly crust on top and can feel that the cake is firm on the side but still slightly jiggling in the middle, you can remove it from the oven. 😊

      Hello there, Do you mean adding sugar to the chocolate mixture to melt together? We're not sure, but maybe you can give it a try, it seems to be a good idea, since the raw sugar is large crystals and slow melt. 😊

    If i’m using a 7inch baking tin then what’s the new temperature for the oven to make sure the cake doesn’t get burnt?

      Hello Annika, first of all, you need to adjust the amount of each ingredients. As for the baking temperature, don't need to change, but might spend more minutes to bake it. As long as it rise and has some crack, the edges are turning golden brown, it's almost done. 😊

      Hello there, we haven't tried it , but someone feedback to us, she used air fryer to make a perfect one. The temperature is 180C, bake 18 minutes. 😊

      My first attempt with airfryer didn't work out, as the butter kept floating up when baking, even though the batter when poured in was quite consistent. Maybe bcos I covered the mold with alum foil (for 10 mins)?

      Since a cast iron pan can be used on both the stovetop and in the oven, many people use it to bake pies, so yes, you can bake this cake with cast iron pan. But we haven't tried it, so don't know how to adjust the baking temperature. 😊

      @@SweetDumpling 烤模的高度有超過5公分然後再溶解那個巧克力糊的時候看不到克力我就離開火源了,但加入第一顆雞蛋拌勻的時候就有很明顯的縮量,拌起來比較重比較硬

      烤模太高,熱風吹拂不到,表面無法有很好的結皮,會變得有點凹凸隆起。剛溶解的巧克力糊要呈現流動狀,另外不要用冷藏取出的冰蛋即可。😊

      Hello there, if you want to make matcha chocolate cake, you need to use white chocolate, but be attention, the white chocolate is very sweet, so you might adjust the amount of sugar. As for the amount of matcha powder, we've never tried it, so you need to try and adjust. 😊

      granulated sugar 100g (1/2 cup)
      all-purpose flour 35g (2 tbsp + 1tsp)
      egg 2, medium size, room temperature
      a pinch of salt
      * more butter and flour to grease the cake tin
      My personal advice is to add 1tsp of instant coffee for extra chocolatey flavor 😋

      你好,這款蛋糕的出爐標準就是表面要有裂紋,中間凹一些,如果太平滑,就有可能表示蛋糕表面還不夠酥。
      如果是表面大開裂那種,則有可能是烤溫太高,我們有試過同樣烤溫但是加開旋風,烤的過程中澎的很大,裂紋的就很多,你也可以試試調降10度,增加時間來烤看看,或許會有讓你滿意的成品 😊

    if the cake is still jiggly in the middle, should I wait until it cools before removing from the pan? I usually remove cakes from the pan by inverting them on a plate, but I'm worried this one might fall apart.
