🇫🇷 Easy Molten Chocolate Lava Cake Recipe: French Fondant Au Chocolat (ASMR)

  • Hi, everyone :) Today we’re going to show you how to make a french molten chocolate lava cake.
    Fondant au chocolat also known as chocolate lava cake or molten chocolate cake. It’s chocolate lover’s dream dessert, with a warm, soft, melting, rich chocolate lava center, and a crackling cake-like crust. So fantastic!
    This recipe is easy and simple. Quick to prepare and serve within 30 minutes. You can dust powdered sugar before serving, or with ice cream and fresh berries. Believe in me, you will fall in love with it. Hope you like this video. Enjoy! :)

    French Fondant Au Chocolat
    ✎ Ramekin Size: 7.5x4.5 cm, and this recipe can make two
    Ingredients
    unsalted butter 32g
    70% dark bittersweet chocolate 40g
    granulated sugar 40g
    egg 1
    all-purpose flour 15g
    vanilla extract 5g
    Instructions
    1. Butter two ramekins and dust with flour lightly, then tip out any excess. Place them in the fridge to chill(at least 10 mins).
    2. Chop the chocolate into small pieces.
    3. Put butter and chopped chocolate in a heatproof bowl and set over a pan of hot water, stir until smooth, don't over heat. Set aside and keep warm.
    4. In a large bowl, add one egg, sugar and vanilla extract and whisk all together until pale and thick.
    5. Pour the melted chocolate mixture into the egg mixture, stir until completely smooth.
    6. Add the sifted flour and fold to incorporate.
    7. Pour or spoon batter evenly into each prepared ramekin(about 80% full).
    8. Preheat the oven to 200C, then bake for 8-9 minutes or until the sides are firm and the centers are soft.
    9. Let the lava cakes cool in the ramekins for 3-5 minutes, then invert onto plates.
    10. Dust with powdered sugar. Serve immediately. Enjoy.

    Is it possible to prepare everything beforehand but leave it for about 1-2 hours before putting it in the oven? I'd love to know that for my menu I'm doing for guests tomorrow so I don't have to stand in the kitchen and make it while we're eating the main dish already

      You can bake it and keep it in the fridge last night. Then bake it on 160~170C to bake it for minutes before serving. 😊

    Thank you soo much! Made it and it was quite delicious! Though I forgot to put the flour the first time I made it, it was still delicious!
    Just wondering though, will there be any difference if I overbeat the egg and sugar mixture (before adding the chocolate & flour)?

      Hi there, if overbeat the egg too much, they will actually lose the volume and start to break down into a clumpy. 😊

    請問老師是烤到蛋糕中間有些微晃動就可以出爐了嗎?另外有一種先溶化巧克力冷藏凝固後在放進巧克力麵糊去烘烤的溶岩巧克力蛋糕的作法和您的食譜成品有差別嗎?

      哈囉,只要表面和底部有烤到結皮,沒有看到麵糊有光澤的液體就ok了,巧克力的屬性就是在高溫狀態下會有流動性,溶岩就是利用這點特性創造流動感。
      至於你說的那個做法,它的麵糊中有加巧克力甘納許嗎?若沒有加,口味道上肯定不同,因為這個法式的食譜是把巧克力甘納許跟整個麵糊合而為一,就是每一口都有濃濃的巧克力,因為巧克力含量高,在烤到理想溫度後,切開會有熔岩效果。如果麵糊跟巧克力分開處理,那出爐後邊緣是巧克力蛋糕口感,只有中心是吃純巧克力,口感和口味應該會有點不同。😊

    Hi 👋🏻 I just tried your recipe right now. And also ate 1 too 🤭
    My review:
    Great recipe. I thought it was gonna make 2 portions but it made 4 medium sized portions like cupcakes. I baked them in silicone moulds on a baking tray for 8.5 mins. Actually I overbeated the eggs, but as I mixed the chocolate and flour, the batter did look like yours. I also added 2 tsps of Dutch cocoa powder and substituted the oil for butter as that’s what I have now. The taste is delicious. Perfectly sweet (I used 55% dark chocolate) and chocolatey. Maybe because mine were small, they overbaked a tiny bit so next time I’ll bake for 6-7 mins so I can have more liquid lava. And I’ll add a chocolate truffle in the middle for even more decadent fondant as I think it could use just a bit more chocolate. 😃 thank you for the recipe. Was not expecting it to work, but thanks to god it did. And did I mention that it only took 35 mins to whip these and bake. And only 3 mins to eat 🤭 💐💐💐
    Tip: I was out of vanilla extract so added 3/4 tsp of coffee. Great result , no coffee flavor.

      Hi there, No problem, you can use a large cake pan or loaf mold to make this pastry, but using a small cup mold its lava works better. 😊

    I follow your recipe but it’s too sweet for me and unfortunately my lava cake didn’t set and bake well as it too liquid and collapsed. I try to increase bake for 14mins instead 😅

      Hi there, you can try to reduce the amount of sugar by 10~15%, or use more than 80% bittersweet chocolate to balance the sweetness. Different oven has different baking temperature, as long as the cake is baked dry on the outside but stays moist on the inside. 😊

      如果想要吃有熔岩效果的,享用的時候要稍微加熱一下,可以讓中心回溫,巧克力跟奶油特性相同,遇熱融化,遇冷凝固。😊

    Hii I tried your recipe two times the taste was too yummy the problem is it's not coming out of my ramekin please any one help what I am doing wrong
    My baking time is 9 to 10 min
    I am greasing my mould with butter and dusting with cocoa powder
    Any one please help
    I am baking in 180 degrees

      Hello there, have you tried to bake one or two more minutes? Or until the sides are firm and the centers are soft, but the surface is already dry. And to use flour instead of cocoa powder. Just give it a try, Happy Baking. 😊

    I just tried this recipe and it's so delicious! I served it with be vanilla ice cream and strawberries, my whole family enjoyed it!
    I did not have ramekins so I used a muffin tray 😅 I baked for 7 minutes and let rest for 3 minutes, they turned out perfect ☺️ Can't wait to use this recipe again!

      Hello there, It is difficult for us to give you any suggestions, becoz we've never tried this. But many people do so, just remember to get the batter into your ramekin first. then refrigerate then. 😊

      @@koala7348 it was basically like raw cake because it wasn't cooked through and that's why it has a liquid center. don't worrytho it's safe to eat:)
