Especially if it’s made to far in advance, even frozen for the ice cream. Lots of RUclips videos on stabilizing whipped cream. Plain gelatin is the usual method used in bakeries.

You have to keep them in the freezer up to about 5 minutes before. It starts to melt fast. I've made 2 of these and that's my experience

The whip cream does not get hard unless you are using buttercream. I usually will cut into mine right after I take it out from the freezer

On cake layer a thin layer of fudge, next layer carmel, or all his favorite ice cream topping it is only once a year
