  • Spaghetti Sopas (Threaded Spaghetti Hotdog)
    Sopas or Chicken Macaroni soup is a common favorite breakfast or meryenda (snack) among filipinos. It is usually served during rainy seasons. But my version makes use of spaghetti noodle instead of the usual elbow macaroni. And the fun thing here is I pierced those spaghetti strand on each of the hotdog pieces that I cut in 6 even pieces. And what makes this soup special is that It has cheese on it.
    My spaghetti sopas is no different from the usual chicken macaroni soup (sopas) it also has shredded chicken meat, carrot, celery and cabbage. The only difference is the threaded spaghetti hotdog (I use a lot of hotdog here, because I LOVE HOTDOG) and the cubed cheese. But the taste is so good it has sweetness, juiciness and creaminess.     Sopas Recipe (Threaded Spaghetti Sausage)
    Ingredients
    1 chicken breast, skinless (boiled and shredded)
    8-10 cups of chicken stock
    250g spaghetti
    15 pcs hotdog, cut into six even pieces
    ¼ cup cheese, cubed
    1 medium sized onion, chopped
    5 cloves garlic, minced
    2 small carrots, diced
    2 stalk celery, diced
    ½ cabbage,
    1 big can (380g) evaporated milk
    Fish sauce (patis)
    Salt and pepper to taste
    Cooking oil
    Procedure
    1. Put water, chicken and a pinch of salt in a pot. Bring it to a boil, remove scum floating from the broth. Lower the heat and simmer for 45 minutes or until chicken is tender.
    2. Remove cooked chicken and let it cool. Set aside chicken stock.
    3. Pull the meat from the bone and shred the meat.
    4. Cut sausage in 6 even pieces. Thread 1, 2 or 3 pieces of spaghetti strands through each hotdog.
    5. In a large wok or saucepan heat oil and sauté onion and garlic.
    6. Add carrots, celery and shredded chicken meat. Stir-fry for 3-4 minutes.
    7. Season with patis(fish sauce). Add cabbage stir for 1-2 minutes. Pour in the chicken stock, bring to a boil.
    8. Add the threaded spaghetti sausage and cook until pasta is al dente (about 5-6 minutes).
    9. Add evaporated milk, cheese and season with salt and pepper to taste. Remove from heat. The remaining heat will cook the pasta so don’t overdone it.
