Fun theory time: One of reasons for the 3 Dogs, is because they are also inspired by the rhyme "Rub-a-Dub-Dub". Where the 3 main characters are the butcher, the baker and the candlestick maker. Masschiff looks like a hot dog and Mabosstiff's tough look/jaws could tie in with the butcher. Daschbun line being bread is the baker and the Houndstone line being connected to tallow and candles would make it the candlestickmaker.

I'm surprised that, for Greavard and Houndstone, you didn't mention the sheer *abundance* of ghost dogs present in Spanish mythology. The Pesanta and the Dip from Catalonia and the Urco from Galicia and Asturias are some examples of this. Many of these ghostly dogs are said to be big, black and intimidating, so maybe they played a role in Mabosstif's design too.
The Inugami, or spiritual possession of a dog in Japanese folklore, is also worth mentioning I think.

Also, it doesn't say that that's how every single Greavard came about, just that there's a story that goes around of how this is the origin of one Greavard. It's the same with the kid that woke up being transformed into a Kadabra or whatever that dex entry was, it's not saying that every Kadabra ever is a kid that's been transformed, it's simply stating that it's just one particular notable instance.

Like ypu said, Dachsbun in German basically translates to "baked dog". And I'm here to explain the names of the other dog Pokémon. Fidough's name in German is "Hefel" which pulls from "Hefe", the German word for yeast and "Dackel" (Dachshund), "hecheln" (panting) or "Welpe" (Puppy).
Maschiff's name is a combination of mob anf mastiff. Mabosstiff's name also pulls from mastiffs and mastifioso.
Greavard's German name is "Gruff" anf consist out of "Gruft", German for tomb and "wuff" the sound that dogs make in the German language. Houndstone's German name, Friedwuff is a combination of "Friedhof", the German word for graveyard and "Wuff" again.
Also, something about the (German) pronpunciation of "Dachshund": The "Dachs" part would be pronounced like the "ducks". I don't really have a good English word to compare to the "hund" part of the word. It's like "hunt" but the 'u' is more pronounced like a double o. Either way, you can look up the correct pronounciation of Dachshund.
And also, please Lockstin, make a video about explaining German Pokémon names.

Perhaps Fidough and Dachsbun’s connection with dogs and bread may take inspiration from dog biscuits (both are made from grain) and hot dogs which is a popular fast food sandwich named after dachshunds which are called sausage dogs named for their brown and long bodies. They’re debut in Paldea may reference the similar looking bush dogs and the reigon’s many dogs may reference the etymology of the Canary Islands, which was named for its population of dogs.

One thing that i noticed was that it wasn't only dachsbun's breed that had connection/roots with Germany
Dachsbun's breads, replacing his ears, are based on the Vianinha/Viana Portuguese bread variant that had inspiration on the original Vienna or Kaiser rolls from Germany. The Vianinha variant is more faithful to the buns Dachsbun has on it's his ears, while the original Viena roll has a spiral cut in the middle of the bun, that more closely resembles Fidough's ears.
Both are different but, in their own ways, they are trying to cut/create a shape of a flower in the bread.

My co-worker who is also a Pokémon fan said I should take out the Dachsbun because they were well baked. I named my Dachsbun "Hermann" which is a dough it grows thanks to their yield and bacteria and you can pass them to a friend or neighbor who also can feed the dough to make it grow and you can make a yummy cake of the Hermann Teig and you can still save some dough or pass it again. I rather baked my Hermann. I got a Fidough caught in a rare ball so I bred a Shiny an traded the other dogs away with the fitting nickname.

Mabosstiff must be my favorite of all the canine Pokémon. I love big dogs and I cannot lie, especially “scary” dogs like mastiffs and pitbulls, because in spite of common misconception, big scary dogs are some of the best behaved. After all, when you have a bad reputation you need to do whatever you can to make yourself look good to others. Hence why I like that Mabosstiff is a big scary Dark type dog that’s a big ol’ sweetheart that will only hurt a fly if said fly is six feet tall and can fire poison lasers from its deadly stinger. Plus Maschiff gives off a Big Pittie Energy, which I enjoy thoroughly. Even Greavard don’t mean to hurt people, and presumably they learn to control their soul sapping ability as Houndstone because all they want to be is good doggies.
