Lol ,try adding oil on the papadi (pooris) it Will automatically raise into it's shape
Try to add hot water while kneading and add as less water as u can. First fry on high heat, it will puff, and then cook on low heat. It will become crisp.😊 It will become golgappe, not papdi.😛

Probably you fried them in high Flame or you didn't add enough spots with fork so it became puri
Try this :
Heat the oil in medium flame and simmer it
Have them fried in a flow flame for 3-5 min you will feel the hardness it gets
