This recipe looks sooo savory delicious! I don’t mean to sound silly but I’ve never heard of Ghee? It almost reminds me of butter that you melt for lobster or shell fish that has gotten cold. I’m 50 yrs old and you would think that I would have tried Indian food before but I’m a little embarrassed to say that I haven’t. I love trying (and cooking) different cultural foods but I just haven’t gotten around to Indian food yet. I grew up and still live in a small town that didn’t have much variety in restaurants to choose from. We have grown quite a bit over the years and we finally have an Indian restaurant that opened a few months ago. Any suggestions on what I should try? I’m game for anything and I love medium spicy foods too... and can someone please explain what ghee is? LoL Thank you, much appreciated. 😊
Ghee is just clarified butter. There is a specific method to make ghee from butter. Just melt some butter in low flame till the fat and the oil kinda thing separates. You have to add some spinach leaves or curry leaves so that you get that specific flavour of ghee. The oil is actually the ghee. You can filter it and then ta-da your ghee is ready. The remaining fat is not waste. You can add some powdered sugar and flour and make them round like laddoos or add some milk and sugar to make milk sweets. Hope this helps❤️

Hope you enjoy Indian food & even try it yourself at home. :) Also, ghee is type of clarified butter made by gently heating cow's-milk butter until water content evaporates & milk solids are skimmed & strained. The remaining liquid fat is called as Ghee :)

Sorry but this is not crispy at all. I have had successfully made other recipes by this Bombay chef. The issue is with the proportions. I tried another recipe that had flour 1cup + semolina 1 cup, which resulted in a papdi that stayed crisp even when cooled. You just need the dough to be a bit more soft than shown here as semolina will continue to absorb water.
wrong recipe , with wheat flour you cant make crispy papdi, it has to have maida (all purpose flour). i tried recipe with wheat flour and its not crispy at all. waste of time
