Liu generally is the humble person that tries to see the good in people. He also sees being the chosen one as more of a burden rather than an accomplishment in general. He only said that to Kung to MAYBE get Kung to train. This is his canonical personality up until MK9 and MKX. It felt shoehorned in MK9, but somewhat reasonable, considering what Raiden did to mess up the time line and his grief at the loss of all of his other friends/allies. He was corrupted by Shinnok and Quan Chi in MKX.

Everyone mocks and underestimates Kung Lao, but he is actually one of the best fighters Earthrealm has to offer. His ego is indeed massive and holding him back, but he is legitimately stronger than many of the MK roster. He defeated the Deadly Alliance and Kintaro. Defeating Shang Tsung is already enough to take notice, but Shang Tsung AND Quan Chi together is just downright impressive. Even Liu Kang would have struggled with that one. His personality may leave something to be desired, but his fighting skills are among the best. The fact that everyone constantly mocks his arrogance when he can legit beat most of them in a 1 on 1 fight always rubs me the wrong way. He's arrogant and boastful, but he can back up those boasts with actual skill.

When did Kung Lao *EVER* defeat the Deadly Alliance? In the old timeline it broke apart, in the rebooted timeline it never materialized.
He did it in his chapter of MK 9's story mode. Check again he in fact beats them there.
