I've had moray eel once and it was a LOT tastier then it had an right to be. It has an allmost a pleasantly lightly sweet skin and meat. I'd definitely love to have it again.
Actually that knife has to be extremely sharp. Eel skin is difficult to pierce, and even the sharpest knives struggle to cut into that stuff. You can easily use up about three quarters of a fairly sharp knife to get through just two feet in length of eel.

We v river eels and v have caught some that weigh over 8kilo. The toughest part is dealing with their slimy skin. But once the skin s off and it's no easy task, it tastes so good.
