  • Would you eat dandelion salad?! Honestly would probably do it again. Dandelion health benefits include: lowers cholesterol, improves heart health, and helps fight inflammation. They have more protein than spinach and packed with vitamins and nutrients
    My dandelion salad recipe:
    - Dandelion greens
    - Red onion
    - Radishes
    - Orange
    - Pumpkin seeds
    - Goat cheese
    - Dandelion flowers
    - Olive oil/lime juice dressing

You might want to remove the base of the flower, the stalks and the sometimes the middle part part of the leaves. Those are the bitter parts which have the "milk" in the middle, or pick them from a shady spot. You can also make wine from the flowers and a coffee type drink from the roots!
