I think it should push the Flap mode off button instead of using GPWS Flap 3 mode, as it shows on the ECAM memo during this G+Y procedure. The summary of G+Y approach phase only says Landing- Use flap 3， GPWS Flap mode - Off. Overall it's fancy video. Thanks!

At Gear extension the plane does not have to be on slope. Flaps 3 and Vapp is all that´s needed for optimum pitch control.

It makes life easier though. Because your elevator will be at the position where your side stick will be at neutral position on the glide.
