  • I try my hand at making spicy pickled eggs using red jalapeños and Tapatio hot sauce. These eggs are keto friendly and oh so delicious! This is a great Mexican twist on the classic recipe of pickled eggs.
    Ingredients:
    2 dozen eggs
    2 cups vinegar
    2 cups water
    2 Jalapeños
    2-5 cloves of garlic
    1/2 cup lime juice
    1/2 cup hot sauce
    1/2 Tbsp salt
    2 Tbsp pickling spice

Looking forward to trying this, not sure I will get that brand of hot sauce here in Ireland, but I might try it with a little Tabasco or maybe Frank's. Also I did notice one thing, sharpen your knife! Can tell it's pretty dull.

The Brine should be heated thru to blend all the flavors then cooled before adding to eggs.

The issue with heating the brine is that heating peppers takes away the heat, so dont boil the peppers in the brine

After using the ratio of water to vinegar (white, apple cider, red wine...) almost everything else is discretionary. I try to watch my salt intake so I omit it. If you like onions, hot chili peppers, hot sauce throw them in! Take good notes so the next batch you can add or subtract whatever you like or dislike. Enjoy your eggs!

leave them in the fridge for 2 weeks or even on the counter or pantry. No need to keep them cool..When you buy pickles, are they in the frozen food section? No, they are on the shelf with a can of beans..lol

Why didn’t you boil your brine and let it cool?

    • @GroundedRoots
      @GroundedRoots  Год назад

This is a reletively short term stored food that is kept in the fridge, so you probably don't need to boil it it keep your eggs from going bad. It certainly wouldn't hurt though

@@GroundedRoots You are boiling it so that your salts, sugars, etc. can break down into the liquid so it doesn't settle at the bottom of your brine.
