    I love how two cloves is alot of garlic to the Brits. Most dishes in Greece take an entire bulb.

      Spiral Breeze - it's not actually it's a lot to her. However she has used whole bulbs before, so the comment does not fit reality.

      Two cloves of garlic is not even a drop in the ocean in India. In Indian cuisine maybe a 5to8 bulbs of garlic is probably used. In Chinese cuisine probably even more garlic is used more than Indian cuisine. Chinese use garlic in almost evry dish they cook.

    Excuse me people. She said, " If you have never come across Fregola before, do not be afraid or even slightly panicked, Its really LIKE, LIKE,LIKE,LIKE dry couscous. Dig your ears if you have to. she didnt say it WAS couscous she said its LIKE couscous

    i'm sardinian and you'r absolutely right! it's called "fregola", similar to couscous but different for the size (it has bigger diameter)!

    I made this the other day and it was delicious but fregula defiitely took longer to cook then time it took to chop parsley! They should be honest about cooking times and not let editors go crazy..

      Yeah this is probably one of my favourite recipe from her, but fregula took alot longer to cook properly, also my fregula that i brought online looked no where near as good.

    Your videos are well presented and lovely to watch. This one is the one of the best... Bravo. I did use dry red wine but I added molasses sugar, later on, to make it more palatable. I cook it without fregola but over "Taglierini" I added 2 more garlic cloves and some lemon zest. Great dish,

    I tried it (with mussels, though) and it was absolutely easy and yummy. The seafood part isn't even that exciting, it's the fregola with the chili flakes. I guess you could make this fregola with vegetables, meat, anything, and it would still be great. Easy, cheap and still exciting and unusual.

    There's a little Ligury colony of descendants of Tabarka isle settlers in Sardinia. They cook their own cous cous. It's called kashkà. Fregula is different, but it's also made by rubbing and rolling dough with the hands.

    I've never understood this comparison between fregola and couscous. To me at least, they are nothing alike. Fregola is a pasta, whilst couscous is a grain.

    Sardinian Fregola = Israeli CousCouse = Ptitim = Maltese Kusksu Pasta . I guess everyone has a different name for the same thing.

    Nigella - quella non e' fregola - la fregola e' sferica ed e' molto piu' dorata per via del grano duro sardo. E poi noi usiamo lo zafferano e qualche pomodoro fresco invece del concentrato.

    WTF? It's fregola and it has nothing to spare with cous cous, fregola is a rye pasta, cous cous is an arab dish made by semolina, the taste and the consistency are totally different. Even the appearance is different.

      Fegola is actually similar to an other Maghreb dish which is Mhamsa. The only place in Italy where they make Cous cous is in Western Sicily.
