Girlllll you hurt my heart putting that flower in there and not Browning it.. just a tip, when your sausage is done remove it, put in your flour, cook it till just golden brown, add salt and pepper to taste add your liquid, cook to desired consistency, then add your sausage back in. You will be amazed at the taste! And again just a tip from an old lady that's been making gravy for too many years to mention😂
Maybe she's doing it the way whoever taught her to cook did it...??? I think some of us are just lucky to have someone who taught us the correct way to make gravy.
There are recipes for the correct way make Sausage Gravy. No oil??? So you can brown the Flour b4 adding the milk. Try it you might like the consistency & the look & taste. 👍

You should always cook the flour first at least a minute or two to cook out the taste, then add the milk or cream.

I thought the same thing. The flour needs to be in the skillet a little to remove the raw taste before adding the milk.

Mix the flour and sausage together before adding milk
Brown the flour it gives it more flavor it is called cream gravy
I would add diced onions and green chilies to the sausage before adding the gravy. Also add some grated cheese on top.
