Yes sure, you can but I recommend you to use regular flour.it taste much better as compare to buckwheat flour .

Can we skip yeast?
Yes you can but result wouldn't come out good .if u want to skip yeast at least put banking powder.otherwise it'll turn out hard (soft ❌)
