    Good day. I just subscribed, watching from CT. I clean my direct grill the same way, but I wipe my grates with towels after wire brushing with my saved deep fry oil in case some metal bristles break off and then spray it.

    Its amazing the amount of homies I have that never heard of chimney starters and thought lighter fluid was the only way lol. They looked at me like it was alien technology when I showed them 😂

      Lol! I just had show a coworker a picture of one 3 days ago. I asked if he used match lite and he said yeah cause he didn't like squirting the lighter fluid on it. He admitted you can still taste the lighter fluid with the match lite. I gave him what I know which ain't much cause I'm just starting but I'm trying to get better.

    I don’t have 8 kids, but I’ve got two teenagers who are both offensive lineman. Haha. They eat eat if you know what I’m saying. Chicken quarters are a blessing. I’m definitely going to try the direct method this weekend. I always do indirect then sear at the end. That chicken looked so good I’ve got to try it. Keep posting my man. Love the content.

    The best part to grill is the leg quarters. Great fat to meat ratio and I also have a family of 8 so they’re great for the budget

    Everything looks 🔥 bruh. I also like that method firm believer in the chimney starter....the only thing I do differently on my smoker is adding wood under my coals....when the meat turn to the color I'm looking for I then go indirect for the smoking

    Just made it. Sadly, my skin came out rubbery. I sprayed mine with duck fat and I didn’t rub the seasoning into each piece like you did, so next time I’m going to prep and season mine exactly like yours and see if it’s any better. Flavor profile was on point.

    That is perfectly grilled dark meat. It’s much better at 200+ degrees. Texture is perfect. Breasts get dry after 165, but you’re right, that dark meat needs to go to 190-210.

      Yep. Intake open the entire time. I was able to manage the flare-ups with making changes to meat placement and didn’t have to adjust air flow.

      Grilling leg quarters direct…about 6-8 minutes at first. I’ll let them go a bit longer as coals settle down.

      It depends. You’ve got to mindful of your specific grill and how it cooks and the grill temperature ranges you are able to achieve. Once you do that, you can adjust the total grilling time and time intervals that you flip and rotate accordingly.

    Question can you direct cook a brisket

      Yes, you can use a combination of direct and indirect heat to cook a brisket, known as the "reverse sear" method. Start by setting up your grill for indirect cooking, with all the coals on one side, and preheat to 225-250°F. Season the brisket and cook it on the cooler side of the grill until it reaches an internal temperature of 160-170°F, optionally wrapping it in foil or butcher paper to retain moisture. Then, move the brisket over the coals to sear each side for a few minutes to develop a crust, monitoring the internal temperature until it reaches 195-205°F. Finally, let the brisket rest for at least 30 minutes before slicing. Thanks a bunch for the question!
