INGREDIENTS
For the vegetables:
- 1 1/2 lbs potatoes, diced into 1/2-inch pieces
- 2 tbsp olive oil
- 2 tsp onion powder
- 1 1/2 tsp garlic powder
- 1 1/4 tsp kosher salt
- 3/4 tsp black pepper
- 1 lb asparagus, trimmed and cut into 3-inch pieces
For the fish:
- 4 5-oz halibut fillets
- 1 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp mayonnaise
- 2 tsp Dijon mustard
For the herb crust:
- 1/4 cup whole unsalted almonds
- 1/4 cup panko breadcrumbs
- 1/2 bunch fresh parsley
- 8 sprigs fresh dill (large stems removed)
- 3 cloves garlic
- 1/2 cup grated Parmesan cheese
- 3 tbsp olive oil
- 1 tbsp lemon juice
INSTRUCTIONS
Preheat the oven to 425°F.
- Prepare the potatoes. In a large bowl, combine the potatoes and olive oil. In a small bowl, mix the onion powder, garlic powder, salt, and pepper. Sprinkle 2/3 of the mixture over the potatoes and place on a parchment-lined baking sheet in a single layer. Roast the potatoes in the oven until they are par-cooked, 15 minutes.
- Prepare the asparagus. Add the prepared asparagus to the used bowl along with the remaining 1/3 of the spice mixture. Toss with the residual oil, and set the asparagus and bowl aside.
- Prepare the fish. While the potatoes are roasting, pat the halibut fillets dry with a paper towel and sprinkle them with salt and pepper. In a small bowl, combine the mayonnaise and mustard. Spread evenly on top of the fillets and set them aside.
- Prepare the crust. In a food processor, add the almonds, breadcrumbs, parsley, dill, garlic, Parmesan cheese, olive oil, and lemon juice. Pulse to evenly combine, 6-10 pulses.
- Bake the dish. When the potatoes have par-roasted for 15 minutes, remove them from the oven and toss them so they brown evenly when returned to the oven. Add the asparagus and place the fish fillets on the baking sheet. Evenly distribute the crumb topping on each fillet, pressing slightly to adhere. Return the baking sheet to the oven and roast until the potatoes are creamy and the fish registers an internal temperature of 130F to 135°F, 18-20 minutes. Remove from the oven and serve.

From my farm to your home. 🏡
My name is Kaleb Wyse and here, you will find delicious recipes, videos from my farm, garden, and fun home projects. My knowledge has been earned from years of home cooks and farmers in my family. wyseguide.com
A farm is much more than a house to live in; it’s a lifestyle. My passion for gardening and landscaping came from outdoor work with my mom in our expansive farm yard, my love for baking came from innumerable short walks to my grandma’s house to make cookies, and as a farmer, my dad taught me that we are the stewards of our land.
So whether you live in a city center or have decided rural life is for you, I hope to inspire you with the projects and recipes I use in daily life. We can’t all live on a farm, but we all need farms in our lives. From the dirt in my vegetable garden to the flour in my kitchen, I’ll show you everything I love to do. Хобби
Love the idea of the mustard/mayo paste and the herb crust on the white fish!
Thank you thank you for this recipe. I buy frozen fish weekly, at least 1 meal a week. You always show us how simple & easy cooking and baking can be.
OK, I would never have thought to prepare such an incredible meal from home. I am a family of three, my husband, and I and I take care of my elderly father who loves food, good food, fresh and flavorful. This is going to be such a healthy Meal that I would order if I had seen it on the menu at a fancy restaurant. I was looking at my cookbook the other day and had to giggle when I saw how many of your recipes are copied and shoved into my book. Looks like I’m going to be adding another one this afternoon. Thank you so much Caleb you are a talented creative person.
Looks very easy and healthy. I'll be making this for my son and daughter on law after my first grandchild is born, which is any day now!!😊
This looks awesome! I have some halibut in the freezer, now I know how I am going to cook it. Thank you! I am also sharing it to a couple of my Facebook food groups.

Thank you for this Kaleb! I desperately need to add fish to mine & my mom''s diets, but I'm terrified of cooking it wrong!
Yes I agree, you reach us alot in easy to understand directions. I love that you show us as well. Also last l bought Espoma products and had the best flowers and plants I ever had. And my neighbors had free tomatoes too since I had more than we needed. Thank you❤😊

Have you tried Wild Alaskan Company? I think it’s great.
I was used to available fresh fish all the time but now that I live landlocked this is wonderful.
Your hydrangea are gorgeous!
I was raised on fish because of that. I preferred it over meat, and I still do. As a kid meat was too difficult to chew for me, and fish was very easy and soft to chew.
❤ Hello 👋 ❤❤❤ I love your video's thank you ❤
Would this be good with pesto added instead of the food processor mixture. I don’t have a food processor. Just wanted your opinion. Love watching your videos!
❤
What food you end up doing with the flat halibut? I would have added it to your tray folded so it doesn't look like it's wasted.
Don't worry! It got cooked and enjoyed as well. Trust me, I hate wasting food. 😊
They say not to put fish and cheese together
The SALT in this recipe will give you high blood pressure! Also, you don't need so much salt directly on seafood because it comes from salt walter. The salt is already infused in your food!
