    I make this with just strawberries and sugar and cook it down and it thickens on it own like jelly

    Strawberries
    1 cup sugar
    2 tbs lemon
    2tbs water
    1 tsp corn starch

    Blending makes it look like strawberry juice instead of sauce. I followed this recipe but i think i shouldve used a mesh strainer

      Yes store it in the fridge in an airtight container for best shelf life.

    Isnt 2 table spoon of lemon juice too much or is it spot on as i am going to use it as a cheese cake topping

      Freezing it is the best way to save it for a long time. But other than that keep it in an airtight container in the fridge for up to a few weeks.

      You can strain them out or leave them in. I didn't strain them, but it is so thick you probably just can't see them.

    What if you dont have corn starch? Is it find without?

      Add a little all purpose flour (same amount) or tapioca starch. It won't be very thick if you don't add cornstarch or another thickener.

      No it isn't jam. Jam is not runny neither is jelly. It is a sauce or you could call it a compote before blending it.
