Sweet Simple Strawberry Sauce

    Ingredients
    1 lb strawberries tops removed and quartered (455g)
    1/3 cup granulated sugar 65g
    1 1/2 Tablespoons cornstarch¹
    1/8 teaspoon salt
    1 Tablespoon lemon juice
    1/2 teaspoon vanilla extract² optional
    Instructions
    00:00 Introduction
    00:25 Combine strawberries, sugar, cornstarch, salt, and lemon juice in a medium-sized saucepan.
    01:22 Cook over medium/low heat until berries release their juices (about 5 minutes or so, mixture should be very liquidy).
    01:41 Bring mixture to a boil and boil for one minute, stirring constantly.
    01:54 Reduce heat to low and simmer until thickened, about 5 minutes (keep in mind sauce will continue to thicken after cooling).
    02:25 Remove from heat and stir in vanilla extract, if using.
    03:00 Allow to cool before serving (over ice cream, pancakes, biscuits, etc.!)
    Notes
    ¹You can omit the cornstarch for a looser, less thick strawberry sauce. Keep in mind the sauce will need to cook much longer to reach a consistency that isn't too runny (about 15 minutes or longer). ²Optional. You can leave it out for a stronger, fresh strawberry taste, but I love the flavor the vanilla extract adds!

    This came out with perfect timing! I had friends over there other day and I was going to serve a homemade pound cake with fresh strawberries, but then I saw your video. I made this recipe and then topped my cake and sauce with a few extra fresh strawberries. It was a huge hit and I even was asked for the recipe before they left. Thanks 😀

    I looked at a couple different recipes for a strawberry sauce and then decided on this one. I’m so glad I made that choice. This is one of those delicious things I’ve ever made. I could eat spoonfuls of this sauce. Plus, it was so easy to make. Why has it taken me so long to find this recipe? Thank you for sharing!

      @@SugarSpunRun I literally made 6 pounds worth this evening. The sale ended today so I went hog wild. I was considering jam instead but I made mini cheesecakes last night & it was a perfect topping. Gonna gift some tomorrow.
      Any idea how long it last in a mason jar in the fridge (just with the lid tight, not canning sealed)?

    Thanks I haven’t tried it yet but some recipes say that you need to add water to cornstarch before pouring it in because it may get clumps in it is this true and if I do that will I ruin the sauce or it doesn’t matter much ?

    Not sure if someone acts already, but can you also use frozen strawberries? I live in Wisconsin and sometimes when strawberries are out of season you just cannot get any good ones

      Instead of the lemon juice? It will change the flavor, but should still work.

    Just to be safe, maybe stir the cornstarch in some water or in the lemon juice before adding it to the pot

      This is a little bit of a thinner sauce. It may be a little difficult to use as a filling in a cake. You could try to cook it a. little bit longer to thicken it up. :)

      You can store it in the fridge for about a week in a jar. If you go through the process of canning it you could definitely keep it a little while longer. :)

      Hmmm that's really odd. Did you make any other substitutions anywhere? Cornstarch shouldn't have any artificial taste to it
