      @@herokillerstain4147this it the part ppl don’t realize. After you trim the fat, and dry it out, you lose about half the weight.
      So the store meat actually about doubles in price to over $20/lb for a dry meat.
      Which is still slightly better than $17 for a 10oz tho but not a ton

    Just make your marinade as follows, vary quantities per your taste:
    2 Cup Soy Sauce
    1/2 cup brown sugar
    1 tablespoon kosher rock salt
    1 teaspoon red pepper flakes
    Juice of 1/2 lemon
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1/2 teaspoon coarse black pepper
    Mix the above well
    Put the sliced meat into a bowl or ziplock bag and pour sauce over it. Make sure the meat is all under the sauce. Put in the refrigerator and stir every so often for one or two days. I prefer two days.
    You can cook the meat in the oven at 250 degree F until just done, but not dried hard. Put the finished jerky in a paper bag on the counter until somewhat dried out. Then eat it. You can vacuum pack and freeze it, since it really has no preservation in it.
    You can also put the marinated meat in your smoker, but not the smoker you use for fish because your jerky will smell and taste like fish.

    food for thought I've made alot of jerky and I quite patting dry I just felt like I lost alot of flavor that way on my "hot" jerky since I primarily use hot sauce for the hot I've got results I like from leaving it soaking wet and just waiting for it to take longer to dry

    When it is still warm I put it in a ziplock back so the moisture gets redistributed. It get's more sticky. Then I put it in the fridge or freezer. Then after that it's perfectly chewey

      Try rump roast. I used to use eye of round until a butcher told me about rump roast. It has a better bite and pull. I can't make enough for the demand.

    Also a tip to keep jerky dry and crisp for day 2, etc is to store it in a brown paper bag. Not a plastic ziplock bag. The ziplock bag keeps in the moisture and makes the jerky go a bit soft.

      You can store it in glass jar and on the bottom put a silica gel (the white bag with balls in it from new shoes) and on top of it paper towel. It will absorb all of moisture from the air.

      I cringe badly every time I see people eat jerky with hydrolyzed corn protein , look into what the ingredient actually is 🤢 basically just byproduct garbage turned into a solid through added chemicals and resold.

    Love the video, just what I was looking for thankyou! Gotta mention tho, I was always afraid of giving my dog anything with onion, garlic, leeks or chives due to the toxicity. The powders are even worse for them. Just an FYI, some people aren't aware so I wanted to mention that.
    I've never tried to make jerky yet because I don't have a smoker. I just may have to try this before spending the money.

      You can also use your oven at low temp for about the same amount of time, use liquid smoke in the marinade to get a Smokey flavour added ✌️😊

    I love Beef-Jerky that is the reason I bought a dehydrator for about €60,- its sooo simple. Get the perfect beef, marinade it, place them in the dehydrator and let it run for 10-12 hours. Done. Perfect Jerky and Taste :-)

      I make it in my oven 170 for 4 hours! Prop oven door open slightly with wooden spoon handle for air flow! Comes out perfect everytime!

    I finally broke down and looked up kecup manis, only to discover that I have been making a version of it for years as a salmon marinade. 1 cup soy sauce then dissolve enough brown sugar to take it to the two cup mark. Finally double the volume with water and marinade at least three hours, over night if possible. Then dry and smoke on alder.

      I actually make beef jerky from beef heart. I only use salt and I think it tastes much better right after it was dried, but maybe that's just because it's organ.

    Excellent, learned some tips for my next jerky batch. I never have added rub after marinade. Impressive you can do it on a komado. I use my pellet or my Masterbuilt gravity.

      You can make it by using one cup of soy sauce, keep disolving brown sugar in it until the level reaches the two cups mark, then add water to double the volume till 4 cups. Wait over night and you have your Kecap Manis.

    Whoever says that you should use only lean meat for jerky has never tried brisket jerky. Fat is flavor and that is true for jerky. It may not last for six months or a year, but who buys beef jerky and keeps it that long? Make fatty jerky.

      Fat on jerky goes rancid quickly, it's to be a voided. Your better off dipping in fresh rendered tallow before eating, that's what I do.

    beef jerky is the best, we have lots of awesome brands here in Australia but nothing beats the homemade - i got to try out Turkey Jerky a few years back when i was in the USA - anyway great recipe guys, always enjoy your videos!

    Wow! Beef tenderloin! That’s some top shelf jerky but, I agree that would be the best beef cut to use. Maybe eye of round. Venison is always my go to. Way more tender and flavorful. I usually make mine from whitetail blackstrap or one of the hind quarter roasts. Top round, the eye of round or even the bottom round. Super tender and flavorful. I always butcher my deer either the day I harvest it or the next morning. Any longer and it does start to take on a gamey flavor.

      It's called Ketjap Manis and it's extremely popular in the Netherlands.
      Google translate tells me it's called soy sauce manis in english

      Yes in an oven or a dehydrator. I don't know if i would trust just hanging it up at room temp but it should also work as long as you have good ventilation and low humidity.

      The sky is the limit. There is a store close to my northern property that has turkey, chicken, pork, Buffalo, venison, elk, alligator, kangaroo, wild boar, rabbit, pheasant, duck, ostrich, antelope, snapping turtle, and python.
