Hi. You could try with chicken thigh cutlets (skin on, one bone). Salt lightly and then sear well on both sides in a hot pan in a little olive oil. Set aside. Then start with the pumpkin and follow the recipe. Once the liquid has been put in with the chickpeas you could just sit them on top and they will cook at the same time. I haven't tried it, but I do think that would work well. Just make sure the chicken is fully cooked!
