Looks good. Have never bought dehydrated hash brown potatoes before and am going to give this a shot. The only thing I’ll do differently will be to not cook the eggs first. Those eggs had to be room temp by the time you ate them. Still...cool video.
Cooking, yeah, great instructions, yeah. But the big question is, how the hell did you manage to tear off that paper towel like that without having a corner rip off and stay behind!?
You need to use some form of oil, (which is not dairy either btw), so that you are actually frying the potatoes. They will brown more like you will find at Denny's or IHOP.

NEVER EVER COOK EGGS BEFORE ANY POTATOES. Once potatoes are done then cook the eggs. Eggs take few minutes and serve them hot and no cold. Yack!!!! Ya, perfect for you!!!!

I tried this brand just added red and green bell pepper diced,onion ,and yummy they tasted delicious.

Never had a problem with frozen hash browns, oil, med heat, 15 minutes a side, perfect. That was a good flip by the way.
