To avoid this problem, you should use a stick blender in mixing your emulsion and not a hand whisk, as hand whisk tends to attract air bubbles into an emulsion.
Xanthan gum is used for making the emulsions thicker, instead of liquid, and also helps to make emulsions more stable. Glicerin is used to solve the gum, it solves better than watter. Also glicerin is a great humectant, for skin and for hair
