There is a magical minute where the soup is just at the perfect, still hot yet not lava temp where you can eat the whole dumpling in a bite without second degree burns, and it is divine.
My fav way so far after trying out all the "ways" is Eddie Huang's. Let it cool in the vinegar ginger tray for a bit and then just pop the whole thing in your mouth. The way the soup fills your mouth is amazing.

A Chinese guy who opened a dumpling restaurant doesn't even now that "long" (笼) in "xiaolongbao" (小笼包) stands for "basket" and not "dragon"???
Was going to talk about this too. I only ever refer to them as "little dragon bags" ironically, but when you're the owner of a restaurant that specializes in XLB and you don't even know how to properly pronounce the name in its tongue, or translate it effectively, somethings wrong. I would rather First We Feast interview the chefs and have someone translate what they say afterwards (like some of the Japanese restaurant interviews in which they are more comfortable speaking in their own tongue). In case anyone was wondering how it's properly pronounced, it goes something like "| see-ow | l-ohn-g | b-ow |" (with a changing accent [high-low-high pitch] on the first word, a upward accent (low-high) on the second, and a flat accent on the last), there really isn't an "sh" sound, but they teach Americans that way for some reason. It's really the way your tongue gets in the way as you try to pronounce a sound like that which makes it sound like there's a hint of an "sh," but you don't actually explicitly try to pronounce it that way. This is true for all "x" sounds in Chinese pinyin, such as thank you, or "xie xie," I tend to hear people pronounce it as "shie-shie" when it really isn't the way it's supposed to sound. This is important because there is actually an "sh" pinyin which sounds like "sh," and thus has to be phonetically different from "x," since pinyin is really the romanization of the phonetic sounds in Chinese.
Although I'm not that good in Chinese myself, my lessons just stuck with me I guess.

xiao long technically means small basket, as in the bamboo basket that the dumplings are steamed in. basket and dragon sound the same but are spelled differently

Din Tai Fung is SUPER POPULAR HERE so anytime I get to go have dumplings, I'm on it! What I do is get a bit of my soy/vinegar mix into my spoon, put the dumpling on, break the dumpling (like he does) so the broth can cool down, and then eat it in one bite. :) That way I can enjoy the sauce, broth, and dumpling at the same time without burning myself!
Love making them love eating them.

Food is awesome. My favourite cuisine is from Georgia (the one in the Caucasus), I recommend you try Khinkali, which is their version of dumplings.

The name 小笼(xiao long) doesn't mean little dragon, it just sounds like it, but it's a different character (dragon is 龙), it means little basket, and usually when you order them, you buy it in basket, the standard is 1 basket = 8 小笼包. Also, you NEVER use soy sauce for it, in the region where it's from, you will only ever find 2 things on the table: black vinegar and chili oil, soy sauce is used for cooking, not as a sauce.
But yea, reason why you don't eat everything is because it's too hot, most people where it's from (Wuxi, not Shanghai), they eat it sideway, bite slightly into it and suck a bit of the juices (it's technically not a soup either), but never all of it, because you want to save some of it for the final bite, to have with the meat. Also, pouring into it is considered strange, just dip the entire thing in your sauce, it adds the same flavour as if you pour it inside, and it's less troublesome... it's just unnecessary.
I've seen plenty of people pour in various parts of China. Some people like drinking all the soup first - you could make the argument that it's like having drinks only before or after you've eaten. That just boils down to personal preference. If Chinese people were exacting about the proper way to eat certain dishes, the entire country would be engulfed in warfare...
Where I'm from, we typically eat XLB with a sweet-ish vinegar like plum vinegar, and thinly sliced strips of ginger soaked in water to preserve their freshness. I've never had vinegar with chili oil before, but I might give it a shot, because it sounds good. The only vinegar and chili oil dumplings I know off the top of my head are known as "chao shou" 抄手 but they are made (and taste) completely differently from XLB (also I only refer to them with this initialism because I'm too lazy to copy/paste the characters when it's commonly known by its initialism too).
Walther, I never said it's normal to use the chili oil, just that restaurants always have these 2 items on the table, but people don't often use it(For xiao long bao, they use for other dishes), and never have soy on the table. Most just use the black vinegar for xiao long bao, and in China, there is never strips of ginger in the sauce either, only place I've seen that, is Din Tai Fung, which is from Taiwan. And their xiao long baos are really not good, they are tasteless.
With all this said, about the chili oil just being on the table, I do actually like to also add it to the vinegar, and a few locals do this, because xiao long baos have a bit of sweetness to them, so I like the balance between that and spicy.
To be fair, while it did look like a soy sauce bottle, he said it was black vinegar while he poured it. Might just be a reused bottle.

Then you spend the night (and the morning) watching the most amazing food. Inspired and exhausted you head into your kitchen at 6AM, only to be hit with the reality that after watching all these amazing culinary displays, all you can make is a goddamn sandwich.

I've got to correct him on something. When he translates Xiao Long, he says it means "little dragon", which is 小龙. the "long" in Xiao Long Bao is actually 笼, which is a cage or container.
Xiao long doesn't actually mean small dragon. Long refers to the steam basket but is a homophone to the word for dragon. Some restaurants play up this pun in their marketing, but it is not the same word.

Looks like georgian Khinkali, didnt know there was same thing in Chinese cuisine.
Looked up Khinkali. Seems like it is closer to your typical baozi (usually translated as "steamed bun"), since soup dumplings specifically have soup (aspic) in them.
