As Western Indian 😅I eat South Indian food on breakfast but both lunch and dinner I mostly eat North Indian food.
Even in south india ever state has its own types of food you can not judge india food by just one city and state
For a high spice accompaniment, I would suggest you to try thecha (Th as in thunder), it has many variations, but the common one is to sauté green chillies and garlic, then grind or pound them using Mortar and pestle, add some salt to it and enjoy.

I want to tell u India is the largest producer of spice and sugar so normaly we used more spice and sugger in our food because it's natural our taste buds r developed like this form born a baby is eating food like this so It's so normal for us ❤❤❤by the way love from 🇮🇳India❤❤
