Over worked the dough I think, or was imprecise with a measurement of something. I think Cafe Dumonde uses shortening and not butter, but yeah looks dry, it should be much less dense than this looked...

different people have different tastes, the beignet is no different really than any other doughnut or pastry, a little jam wouldn't hurt anything, lemon curd or whatever you want. i like beignets with a little orange blossom water added in the dough, similar to madeleines... people can literally do whatever they want. ive had cafe du mondes beignets and its really nothing to get bothered about.

@@Tiffanylovesjello do it with crescent roll dough... a bit closer to beignets than biscuit since beignets are airy. tbh though, beignets are extremely overrated, its no different than a dougnut or a cream puff or any other random pastry you get. people like to make things into something they arent... like the hot chocolate at angelina paris...unless you are a culinary expert with very sensitive tastebuds, nothing really matters lol because when you eat regular food all the time, you really can't tell the difference with minor nuances.

I'll be honest, I only live an hour away from NO. First of all, it's not as glamorous as some of you think.. Actually it's quite the opposite, it smells of sewage but you get used to it. I stayed in Hotel monteleon... Homeless and drunk people are nearly unavoidable and bourbon street definitely comes alive in the afternoon.. Cafe du monde is a waste of time in my opinion on a hot day with a long line and people practically rushing to get a table which already still has used plates and cups. One order is just three beignets and the coffee tastes watered down and needs a lot of sugar. Lastly, the only thing I could imagine going to that cafe is to say you've been to it and just so you know.. Yesterday this month there's been eleven murders. That is why I'm always nervous going to this city. But if you want to still go than you can, I recommend the sugar and spice shop in the French quarter they serve big and delicious pralines.

You stayed at The Monteleone and had nothing to say about it? Except comments about street people?

Well, NO is a beautiful and cultural city, one of very few cultural hotspots in our country with any actual culture. that being said, people are sheep, they are told thosebeignets are cafe du monde are out of this world but they really aren't anymore special IMO than a funnel cake from the carnival. theyre a novelty. people pretending they have such hyper sensitive palettes to detect the nuances between cafe du monde beignets and the rest are delusional.

I made the doughnuts and they came out great. If you think there is something wrong with this recipe then you probably don't know how to make them. If you think that then put your own recipe up and let people try it out to see if it's better! BTW I was thinking of princess Tiana when I saw this!

You should show us how to make cookies from Insomnia Cookies!! You might not know about them though because they only have East Coast locations but their cookies are amazing.

Or just use premade biscuit dough, my mom is Creole and from NOLA but she works a lot, so she taught us how to fry them using that. Works just as well.

Don't add the salt with the yeast. It deflates it. From what I know, just add it with the dry ingredients..... Also, I think the Tan Zhong Technique would be quite useful for a bread
like beignet. It'll make the bread more fluffier.... I hope this was useful....

I don't think Cafe du Monde lets the dough rise before they fry it.
