Ingredients:
1/4 ounce active dry yeast (one packet)
1 1/2 cups warm water
12 tablespoons granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
3 1/2 cups bread flour
4 tablespoons vegetable shortening
1 teaspoon salt
4 cups all-purpose flour
1 tablespoon oil (for deep-frying)

I had so much fun #Baking these New Years #Beignet! They are very similar to a #Donut but are much more soft and airy. It is the perfect way to celebrate 2021! You can also cut them into different shapes using a cookie cutter to match any occasion.

Do you have any recommendations or easy tips for using gluten free flour and making the treats just as yummy?
Maybe find a gluten free recipie and merge it with some of ro’s tips and tricks
oh that would be nice especially since my dad eats gluten free
Unfortunately it's tough to make a dough you can roll and cut with most gf flours. The gluten is pretty essential for structure.
I love beignets! They're so fluffy and perfect and I just think they're awesome!

As a Louisiana native and resident, yes I know and have eaten beignets. However I've never made them from scratch (I've either purchased them, or made them at home using Cafe Du Monde's Beignet Mix), so I was quite interested to watch the video.
I was blown away. This was such a pleasure to watch: your techniques, advice, energy, and personality are wonderful. I'm so glad I watched this video, and plan to watch several more!
Your happiness and energy was also contagious, and oh BOY did I need that after this Year of Horrors (a pandemic AND TWO HURRICANES and that wasn't even everything). Maybe I won't crawl back into my hole and hide until 2021 arrives. Or maybe I will. But if I do, I'll make these beignets first and bring them with me into my hidey hole! Thank you, Ro, sincerely. I needed this.

I love Beignets!! My mom and Nana took me to New Orleans for my birthday and I got to try Beignets for the first time. And I loved them!! They were so fluffy, and my nana took a ton of pictures while I was eating them. It was amazing.😁😁😁
