    INGREDIENTS:
    1 lb ground beef
    1/4 medium onion
    1 egg
    1/4 cup pork rind crumbs
    1 tsp salt
    1 tsp ground pepper
    INGREDIENTS FOR TOMATO SAUCE:
    1 Tbsp olive oil
    1/2 medium onion
    1 can (8 oz) tomato sauce
    1/2 cup water
    1/4 cup maple syrup
    1 tsp salt
    1/2 tsp ground pepper
    COOKING STEPS:
    For tomato sauce:
    Heat olive oil in the cast iron pan over medium heat. Add sliced 1/2 onion. Cook, stirring occasionally, about 4 minutes.
    Add 1 can tomato sauce, 1/2 cup water, 1/4 cup maple syrup, pepper and salt. Stir together to combine.
    Reduce the heat to low and let it sit, while making meatballs (about 10 minutes).
    For meatballs:
    In a bowl combine 1 lb ground beef and 1/4 chopped onion.
    Add 1 beaten egg, 1/4 cup pork rind crumbs, salt and pepper. Combine all ingredients together.
    Form meat mixture into golf sized balls. 1 lb beef is about 9 meatballs. Gentle nestle the balls into the sauce.
    Cover the pan with a lid and turn heat to medium-low.
    Cook for 30 minutes overall, turning the meatballs in the middle of the process (in 15 minutes).
