- Make delicious Vegan mayonnaise recipe made with a few simple store cupboard basics in less than 1 minute. Then turn it into Garlic Mayo, Burger Sauce, Sirachannaise and Tartare Sauce. Plus special bonus recipe! (spoiler alert.. Its Coleslaw..)
I got a recipe for a Japanese style mayo. 100ml soya milk, 180ml veg oil. 1/2 tsp of soy sauce. pinch of salt, 1 Tbsp of nutrional yeast, 1 Tbsp of white wine vinegar and 1 Tbsp of Dijon mustard. I use a cheap hand blender, ingredients in a bowl and give it a good mix. Nice tang to it

NFLAMATORY NATURAL OF OILS. ONES RECOMENDED ARE EVOO, EVCO & AVACADO. SOY is hugely inflamatory. I use svacado oil and it is delicious

I use a cake of soft tofu and olive oil and vinegar and salt to make a vegan mayo. I never realized soy milk would work. Thank you for this video.

Wow! I've been trying different recipes using VeganEgg and now aquafaba, plus other ingredients and an immersion blender with uneven results. This worked immediately and, with a bit of black salt added for my preferred egg taste, was ridiculously easy and is perfect for my needs. I used my Ninja Professional (900W), which is the same type of small high speed blender at the NutriBullet. My soy milk was chilled, but I don't think that matters. I did not double the recipe. Thank you!!

Sunflower oil works and olive oil too, use stick blender and add oil slowly, it gets thicker
Can't wait to try this on way to store now. So sick of big business poisoning me with seed oils.

Good suggestion. Yes I have used one successfully. I find quite a narrow container helps.
Thank you, will try a small batch of it with 1/2 the oil, and also another batch with aquafaba instead, just to see how they turn out, aiming for lower fat content :) I think chickpea unchicken salad would be good, or a BLT (with vegan bacon).

He stated that it was a challenge to scrape out from among the blades when using the blender.
I often remove the blades, gasket and ring and use a quart canning type jar for foods that I won't use the whole in a sitting. Cover with a lid for the jar & refrigerate.
I think Hellman's AKA Best foods has always had some alternate emulsifier in thier mayonaise that wasn't egg and that doesn't show up on the label. It never tasted like egg, which is what I think made it so appealing. I like my wasabi mayonaise.
Hi. Liked the video. I tried to make mayo using your ratios but it stays runny and doesn't thicken. The only thing I did differently was use apple cider vinegar as it was all i had. Any idea why mine doesn't thicken please? Also, I use unsweetened Soy milk, if that makes a difference?)

I just asked about avocado oil. Since avocado oil also contains lecithin, can I ask, did you try it and did it work well?

Absolutely the easiest vegan recipe that has worked with a blender.
That is impressive
You can use a julienne to cut the cabbage and carrots or even better I like my coleslaw grated. Learned from a Ukrainian friend to add a spoon of sugarmaple syrup to the coleslaw takes away the bitter taste of coleslaw.
Good tip with the julienne grater. I use a mandolin sometimes, but always with great fear for my fingers. Anyone found a really good one?

So if like me you have both soy lecithin and sunflower lecithin.. bc I make my own vegan coffee cream.. you could use any milk and any oil? and just add lecithin? I have seen it using aqua fabba as well. I do like that you don't have to take forever to drizzle in the oil super slowly with this method. does it last in the fridge?.

Thank you. You can swap out a small amount of olive oil for rapeseed but you need the emulsifier. You could also add a couple of tablespoons after it has emulsified.

I'm not sure, but I think gerkins are a sweet pickle and can be bought in Canada. I think my parents bought them when I was a kid. I'll have to check at the grocery store
Hi John, I hope you can help me work out what I am doing wrong with this recipe? I am really keen to get this right! The result was runny and the mixture did not emulsify very much at all, even when I added in a bit more lemon juice - it helped a little but not much, and the runny mixture tasted really oily. I followed the recipe, using a cold-pressed rapeseed oil, soya milk (not the same brand of milk- but with a very similar ingredient list) bottled lemon juice, as I didn't have a fresh one, and I used raw apple cider vinegar. I made it in my smoothie blender, which is not a nutribullet and I think it probably isn't the same power, so I am looking at getting one in case the speed of blending is the problem. I really hope you can put me on the right track so I can make my own vegan mayo - thanks in advance!
Hi Susan, I am going to try and replicate the problem using just the Lidl cold pressed Rapeseed oil. I usually use just Vegetable oil. Which is always Rapeseed. Sunflower oil definitely doesn't work. I have used bottled lemon juic ei the past and that has always worked. Ill do some experiments and get back to you.
@@cookuu1934 Hi again John, I thought I'd let you know I managed to get a Nutribullet (eBay, as you suggested 😁) and it worked! So speed/power of the blender is obviously a factor. The only thing is that the mayonnaise is very yellow due to the golden colour of the rapeseed oil. It tastes fine, but I'm going to try again using a lighter coloured oil to get more of a mayonnaise appearance. I'm delighted. Thanks so much for your help and encouragement!

Dressings are best with no oils
Great recipe for a mayo, and a good explanation of why to use soy milk. One thing you did say, that goes against what I was taught, and I may have been misinformed. You said to not peel carrots. Based on what I was told, that might be OK with orgainc carrots. However, I was told that the skin of carrots is absorbant and will take up agri-chemicals, including pesticides. Carrots more so than other vegetables.
Could somebody please confirm or deny this information about carrots.

Thank you for finally pointing out WHY most of my attempts to make vegan mayo have been dismal failures. I end up with lovely white sauce, but not thick. I don’t like the taste of soy milk and usually buy sunflower oil for my non flavour oil so two big problems right there! Refuse to use da than gum too, which some recipes have called for. Any success with ANY other non dairy milk? Like cashew? I tried it with home made cashew milk and failed. Will try this again and try to add more lemon flavour perhaps to kill the soy flavour? Love tofu, hate soy milk… ah well. Thanks for the recipe and the tips. Lecithin… will go down that rabbit hole… Lea protein powder makes the sauce taste nasty AND still does not thicken btw… tried that with my failures….

Edit: In the US, it's called canola oil, not rapeseed oil. What is sold as vegetable oil here is soybean oil. Don't know if that will work, but I tried canola oil and it worked. That is, it created the consistency of mayo, though it didn't really taste like it. Vegannaise is better if you need a convincing substitute for mayo. I figure it's good for sauces and salad dressings, though.

Hi Cyberman (Doctor Who fan?) Definitely not sweetened milk. Rapeseed oil is a must, but you can add a couple of tablespoons at the end for flavour

I had a big fail - my mayo would not thicken. Later, a presenter said use unsweetened soy milk. I do. No probs. :)
Try adding more milk if you are having problems with thickening. Not all soya milks have the same amount of Lethacin. Try a different brand perhaps.

I am allergic to Soy...I really would need another milk to make me a happy camper. Also, Hellman's price keeps going up!
Why not try making a bean milk? It would just be bean flour and water. Blend on high speed. Should get you what you need.
edit: Try adding a neutral flavoured bean milk. I’d imagine some beans will ruin this recipe.
Try an Aquafaba based recipe it might work for you.
Is there anything other than SOY that will suffice? Are you talking about the soy lecithin? What about other forms of lecithin? Are you saying that the grapeseed oil also has lecithin? Sorry for barrage of questions... great video! I am excited to make this.

I have not had any success yet with vegan mayo. I have milk and oil flying all around the kitchen. Today I tried yours as it looked so easy. Again nothing but oily milk. I do not understand. I used milk I made from tofu, lemon juice, grape seed oil, dash of salt I even put a drip of soya lecithin because I never have success. Well... fail for me again.
