Made this today. So happy to have found a good oil-free vegan mayo. Love the texture and taste. I added a bit more white wine vinegar for more tang (just a preference). I made a tofu-based mayo from another plant-based blogger but this is just so much better in so many ways. Will be my go-to mayo recipe from now on. (It reminded me of a dipp/sauce my cousin has in a recipiebook - you swap the cauliflower for bellpepper and sundried tomatoes) I am using yours for dipping veggies and as spread on sandwiches. Pardon my ignorance, but what is the reason for 'oil free'? Is it just a variation? A way to cut the cost (if it's extra virgin olive oil)? Healthier? Just curious. I will make this at the weekend - a good excuse to buy cauliflower (a much ignored vegetable in my apartment).
Just made this and it's FANTASTIC!! I had more cauliflower than the recipe called for so in addition to the recipe ingredients I added a 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp salt free Spike seasoning and went a little heavier on the Dijon mustard. I added a little too much soy milk to thin it with and ended up dusting in a little arrowroot powder to thicken it back up again. I could not stop licking the spoon that I used to get it out of the blender - LOL This basic recipe can go so many ways. I am going to add a little chipotle chili powder and a spritz of fresh lime juice to some of it and spread it on corn on the cob for dinner tonight for Mexican street corn.
Is 500g of cauliflower a 1/4 or 1/2 of cauliflower head florets ? Since i don't know how g = in cup measurements or in cut up veggies i needed to ask you for help. Thanks for your time, P.S. i love the quiet of your recipe video's except for cooking. Allows me to concentrate.

I'm a single person...could a portion of this mayo be frozen? I made your sweet and sour cabbage and simply loved it. I'm one of the WFPBed SOS free folks. So really appreciated this recipe. Ditto about the sweet and sour cabbage. For the cabbage dish I used vegi broth instead of oil to cook the garlic and used very little salt (1/8 of a teaspoon). I did use coconut sugar. Thank you for your recipes.
😘👌🏻 Made a similar dip a while ago only added a bit ghee to it along with lemon juice while cooking further more after I processed it in a food processor. It was plain, no mustard added but tangy and shiny. The downside? It forces you to eat more sandwiches before it expired. 😅
Alternatively, you can soak the cashews for a few hours and then drain them well before adding to the rest of the ingredients. You can also find all the important tips regarding the water quantity etc. in the description box :)
I just tried this recipe! It's delicious! My only question is I wonder why the color on mine doesn't look creamy white like your video! It's more like a pale yellow! I used 1/4 tsp of yellow mustard!
Thanks! so glad you liked it. The pale yellow colour is because of the yellow mustard. I ran out of it so had to use dijon in the video, hence a lighter colour.
I guess that you could add a hint (dash, pinch, 1/8 - 1/16 tsp) of turmeric (kurkuma) to give it a more yellow colour. It's quite "cauliflower-pale" as is.
This looks beautiful, but it nevertheless tells me that I will probably never be able to sustain being vegan. Every substitute for any delicious thing I try to find always has a bunch of garlic in it, and garlic gives me multi-day migraines. I would love to see someone try to sustain a vegan diet without garlic. I think it would be difficult for most.
